I've got a pork tenderloin on the grill soaking up some hickory smoke, slow cooking. Some garlic mashed potatoes and maybe a crescent roll. Mmmm Mmmm, good.

Bring me your finest smoked meats! You gotta get one if you've got a good palce for it. It's a lot of work to really smoke like a turkey or a brisket but obviously the payoff is worth the effort.

One of the many reasons I couldn't live in the city. Way too many people.

The only places that aren't like that in Philly you:

1) wouldn't want to live there

2) certainly wouldn't want to park your car anywhere near there

Then again, I haven't been there in a few years, so who knows what it's like now????




And since dessert is part of the meal, I just had a bowl of Edy's peanut butter cup.

no surprise i made kielbasa ( this way for the first time )

i cut up peppers, onions, and fresh hunks of garlic and lightly sauted them in olive oil with a little salt 'n' pepper. put them in a 'cooking bag' with the sliced kielbasa and whole potatas out of a can. cooked on 350 for 1 hour and it's pretty good.

i think next time i'll cut up some fresh potatas instead...

I usually use a piece of foil, but you can use a piece of wood too. That way you get the wood flavor in addition to the grill.

Are you grilling with charcoal or gas? If using gas I sometimes like to get the grill hot searing the fish then turn the heat off and cook using low, indirect heat. Either way you should be able to buy cooking planks for fish and they're great. The cedar planks make some yummy salmon.

I noticed that some folks have already suggested planking your salmon, but you can also try making a smoker pouch* and using steaks rather than fillets on the grill.

And skin them first. (I know that crispy salmon skin is yummy, but that's where your fats are coming in!)

On the other hand, steaks are thicker, so they make for better grilling. There was a whole episode of Good Eats on the Food Network that covered cooking fish, including salmon (http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_157,00.html?rsrc=search). . .I get hungry just thinking about it!

* To make a smoker pouch:
(1) Get some mesquite chips (sold online, at WholeFoods, Sur La Table, shmancy cooking stores, etc.) and soak in water for at least 30 minutes.
(2) Take some heavy-duty aluminum foil, fold it into an envelope and put the chips inside. (3) Seal the pouch, then stab a few holes in it.
(4) Stick the pouch on the grill, over the heat. Put your food item to be smoked (fish, chicken, steak, etc.) near it, but not on top and close the lid of your grill.

The smoke will flavor the meat very nicely.

BACON CHEESEBURGER

Start to finish: 20 minutes

Servings: 4

1/2 pound bacon

1 small yellow onion

1 roasted red pepper

1 pound ground beef (85 percent lean)

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 cup grated Parmesan cheese

Heat a large skillet over medium-high flame. Add the bacon and cook until crisp, about 3 to 5 minutes. Drain and set aside.

Coat the grill rack with oil or cooking spray. Preheat the grill to medium-high.

Place the onion in a food processor and pulse until finely chopped. You may need to scrape down the sides several times. Add the bacon and roasted red pepper, then pulse again until just chopped. Transfer the mixture to a large bowl.

Add the ground beef, salt, pepper and cheese to the bowl, then use your hands to gently combine until just mixed. Divide the meat into four equal patties.

Grill the burgers for 4 to 5 minutes per side. Do not press the burgers during cooking.

Tonight's menu features boneless chicken breast injected with Louisiana Hot Sauce and grilled over hickory chips. I might melt a slice of provolone on it and call it good. I haven't thought about a side yet. Hmmm.



Cube up some potatoes real small, sprinkle on some Cajun seasoning, broil for 10 to 15 till they're crispy. And a cold beer of your choice, call it a day.

Damn it man. That sounds just this side of perfect with maybe some green pepper in there too but alas I have no potatoes.

What Can You Grill Experts Recommend On Grilling A Fatty Fish, Like Salmon? Try a cedar or cherry grilling plank. It's a plank of wood you soak in water for like an hour then put your fish on it and the whole thing on the grill. A lil rosemary, lemon, salt & pepper and you're golden. The plank won't burn but it gives a nice hint of smoke to the fish.

I cut red potato's in quarters....Rubbed them with rosemary and very high quality chili powder....I Put them in the oven at 400 degrees with cooking spray....I put a pork shoulder roast on the grill rubbed with one whole jar of mild horseradish and honey mustard....Then I grilled some whole asparagus tips with fresh lemon and black pepper corns ....Sprayed with butter.....Yummy:smoke:

Mrs Jug made some great pasta salad With pepperoni....When I was a kid we called it goulash (the hamburger beans.)...Its just kidney beans Dark and light,,, Garlic, Hamburger,Onion and you use the juice from the beans....We call it the Jug hayseed special...:smoke:

We had a roast beef cooked in coffee. The gravy it made was very strong, didn't taste like coffee at all once the drippings mixed into the coffee.

i'm visiting my grandparents in Sarasota, Fl and we went to the "Linger Lodge" (linger longer!) and i thought of xm (gay). its really cool place to eat, next to a little river with tons of wildlife and alligators. i had fried alligator tenders for an appetizer and a alligator chowder, followed by catfish dish with a southern name and a great spicy aftertaste. soooo damn good!

I cook a lot with turnips..That sounds great im gonna try that...yummy..As good as you are on the computer you should be able to buy the thighs already boneless....:wink:

After some Food Network inspiration, I made homemade chicken noodle soup.

For the noodles I used cheese tortellini, and for the chicken I made little meatballs out of chicken/apple sausage and fresh parmesan. Lots of chunky vegetables and fresh herbs.

it's a few hours late but tonight I made a london broil. I marinated it for a whole day in soy, red wine, oil, hot pepper flakes, garlic, onion, brown sugar, and a tiny bit of cumin. Cooked it for 6 minutes a side over very hot natural wood charcoal. Made potatoes, onions, and carrots in foil on the same fire. It was awesome! great wine too...Toad hollow Pinot Noir.

Went to my brother's house tonight to celebrate my father's 75th birthday, my niece's 10th birthday and Easter. My brother and his wife made Dr. Pepper marinated flank steak (outstanding), mashed potatoes with cheddar cheese, smoked bacon, onions and garlic (even better than it sounds) and some spicy garlic bread that I may dream about tonight. And then 5 year old nephew told my father that he he was so old that he should be a statue. And my niece told me that she has earned an award for being an advanced reader in her grade and I started to tear up. My niece almost died when she was 3 and she suffered some brain damage and they thought she would always be behind children her age. She was for a few years but she never stopped working and now she's out in front.

Sorry, had to get that second part out somewhere.

made tacos with a homeade chipote sauce


recipe, please! i make tacos/burritos for dinner on occasion using one of those 'taco seasoning' packets. i'd love to ditch the packet for a more home-made version.

as for dinner... tonight i splurged on Cheeburger Cheeburger cheeseburger and fries and I ate half for dinner.
but now that I have had many servings of Vodka I just might eat the second half.

That's a delicious looking hero. I'm gonna fire up the grill and do a few burgers. My chick will make some macaroni salad. Grilling is thirsty work. Glad I stopped on the way home.

And I am a girl so I don't own a grill aside from my foreman.

My buddy at work hunts a LOT. Tonight, he gave me a wild turkey breast. I think I'm going to try THIS RECIPE. (http://homecooking.about.com/od/turkeyrecipes/r/blgame5.htm) It sounds pretty damn good.

He keeps promising to bring me some antelope sometime. He has a terrible memory, though. I hope he finally brings me some. I hear it's very good.

A got a free turkey right before Easter. It's been roasting for over 3 1/2 hours. Sides are turnips, mashed potatoes, stuffing, corn, and cranberry sauce. The smell has been driving me insane all day. I'm starvin.

I think that when we finally buy our house, we will be getting a margarita machine before throwing a housewarming party.

I got 8 oz. filet steaks from Whole Foods (because the butchers actually speak to you and you can pick the hunk o' beast you'd like to purchase ... oh, and I like filet rare-rare-rare, so I'd rather get my beast fresh-cut) farfalle pasta, veggies, Yukon Gold potatoes, Jersey-fresh asparagus (awesome!) ... yeah, I went a little nuts. Totally worth every penny.

I like the butcher at Whole Foods as well because he butterflied the steak I cooked for Matty so I could cook it through the way he likes it without it getting tough .. in less time than it would've taken to cook it through if it were still 2" thick.

Let it sit on the counter for 20 minutes to come up to room temperature, seasoned it with a li'l bit of Kosher salt and dried thyme ... seared it in a very hot grill pan until the lovely smell of caramelizing beef filled the house ... mmmmmmmmmm. Steak.

Matty is now in a meat coma.



(And he's recovering so he can have some dessert.)

The way I see it is, if I am paying top-dollar for my steak, I had better not be terrified to eat it the way I want it. (Which, usually means still bloody.)

Oh, and the customer service can't be beat, from the butchers & fishmongers behind the meat & fish counters to the cashiers at the front of the store, I have no complaints.
