Yesterday me and my brother in laws orderd some appetizers and cooked a little for the Mothers... (BTW - Duck Confit Wonton's FTW!!!)

We had 2 nice Eye Round roasts. I made a nice dry rib of espresso, sage, chili powder, onion powder, cayenne, salt, pepper and brown sugar..

It came out fantastic!!:clap:

I've made my own sauerkraut after my cousin (lives there) sent me a recipe. I wish I still had that clay pot, damn my ex!

I made brats many years ago, but I have since drank so of course I can;t remember the recipe.

I actually do know how to make them... and turn out great... but no one eats them in my house so I will not waste time or money to make them

For tonight; I marinated 2 chicken breasts last night in a chili, beer, garlic concoction that will go on the grill tonight and eaten in the form of a fajita. I have a bell and half an onion marinating as well.

Yeah last night I went with Chipotle wings and sweet potato fries..I was too lazy to cook so they went from freezer to oven.

Preparing tomorrows meal, slices of beef tenderloin rolled in olive oil and dredged in coarse fresh black pepper. This will chill overnight and I will enjoy it hot off the grill for lunch with salad and probably fried spuds. I love the black pepper taste.

Does anyone have a green peppercorn sauce recipe? I have my favorite that consists of peppercorns, green onion or shallots, cream, wine, chicken broth. Great stuff poured over a hot grilled steak. I would be interested if anyone has a personal recipe.

Last night's turkey breast (which I bought pre-brined from Wegman's) turned out pretty nicely ... even better was my taking a recipe for roasted chicken over bread cubes (http://query.nytimes.com/gst/fullpage.html?res=9A06E5D91139F932A25750C0A96F9C8B 63) and using that idea in my biggest nonstick (oven safe) pan because I haven't figured out where I'll store my fancy-schmancy roasting pan ... and half a breast of turkey doesn't exactly justify making a huge mess of one specialized pan.

We even have leftovers, so maybe it'll be turkey sammiches tonight. Nom-nom-nom.

And maybe this weekend, we will have fajitas. I have a hunk of flank steak in the fridge that I have to use or freeze by 5/28.

I kept it on low for 8h. Tasted great and was very tender, almost falling apart yet sliceable.

I think I will make a salad out of the rest, maybe a turkey melt of sorts...

Before I moved out of Jersey, there was a great Spanish/Portuguese place rght on Ridge Road. Teros Snack Bar & Barbecque. Dont know if its still there but It used to be great

Just moved down here to FLA last year, I was up in Seaside Park for 25 years, MISS MISS MISS striper fishing. Big shark Tourny here in Ft Myers next weekend. All catch and release tho

none at all. i went off of grains completely, then tried adding them back in, and realized that they take a greater toll on my body than any benefits are worth...and most of the benefits i can get more efficiently from other food sources.

Grain allergies seem to becoming quite common, and I would love to know if it is an American phenomena or if it is a worldwide thing. Processed foods contain many hidden grains and sugars (grains bulk out food) and I wonder if that has anything to do with it. I will have to look into this further. I seem to be the opposite, I have found that eating whole grains (and brown rice in particular) helps my IBS tremendously. I think if I developed a grain intolerance I'd be screwed and have to move into the bathroom permanently.

With IBS (I have had some research experience in) it is difficult to say what harms one will benefit the other. Sometimes the irritation can come from materials, some celluloids that our bodies do not completely break down such as grains. Yet fiber can benefit IBS quite a bit.

I give you Potato Pizza.
Ingredients
For pizza dough

* 2/3 cup lukewarm water (105–115°F)
* 1 (1/4-oz) package active dry yeast (2 1/2 teaspoons)
* 1 teaspoon sugar
* 2 tablespoons olive oil plus additional for brushing
* 1 2/3 cups unbleached all-purpose flour plus additional for dusting
* 1/4 cup yellow cornmeal
* 1 1/2 teaspoons table salt


For potato topping

* 2 lb red boiling potatoes
* 3 tablespoons olive oil
* 4 garlic cloves, minced
* 1/2 teaspoon table salt
* 2 teaspoons chopped fresh rosemary
* 1/4 teaspoon black pepper
* 8 oz fresh mozzarella, grated (2 cups)


* Garnish: fresh rosemary leaves and coarse sea salt (preferably Maldon)

Preparation

Make dough:
Stir together water, yeast, and sugar in a large bowl and let stand until foamy, about 10 minutes. (If mixture doesn’t foam, discard and start over.) Stir in oil, flour, cornmeal, and table salt, then stir until a dough forms.

Knead on a floured surface, dusting with more flour as needed to prevent dough from sticking, until smooth and elastic, 5 to 10 minutes (dough will be moist).

Put dough in an oiled deep bowl and turn to coat with oil. Let dough rise, covered with plastic wrap, in a warm place until doubled in bulk, about 1 hour.

Form dough into pizzas:
Punch down dough and divide into 6 balls. Roll out 1 ball of dough 1/8 inch thick (about 7 inches in diameter) on a lightly floured surface. Brush off excess flour, then transfer dough to a lightly oiled baking sheet and cover surface of dough completely with plastic wrap. Roll out remaining balls of dough in same manner, covering with plastic wrap and stacking rounds. Wrap baking sheet with more plastic wrap. Chill dough until firm, about 2 to 4 hours or overnight.

Make potato topping while dough is chilling:
Preheat oven to 425°F.

Thinly slice potatoes (1/8 inch thick) using a mandoline or other manual slicer, then toss with oil, garlic, salt, rosemary, and pepper in a large bowl until lightly coated.

Spread potatoes in 1 layer on 2 lightly oiled baking sheets. Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until tender, about 15 minutes total. Cool potatoes on sheets on racks.

Grill pizzas:
Prepare grill for cooking.

Remove plastic from 3 dough rounds (if grill is not large, work with 1 piece at a time) and lightly brush dough with some oil. When the fire is medium-hot (you can hold your hand 5 inches above rack 3 to 4 seconds), carefully transfer dough, trying not to stretch it, oiled side down, with your hands to grill rack.

Grill oiled rounds until undersides are browned, 3 to 4 minutes. Flip over with tongs, then, working quickly, sprinkle each crust with 1/3 cup mozzarella and cover with potato slices, overlapping them and leaving a 1/4-inch border around edge.

Grill, covered, until undersides are golden and cheese is melted, about 4 minutes.

Cooks' notes: Dough may be mixed in a food processor. Process proofed yeast with oil, flour, cornmeal, and salt until a ball forms, then knead on a floured surface. You can use a lightly oiled well-seasoned ridged grill pan to cook pizza dough. Potato topping can be prepared 1 day ahead and chilled, covered. Bring to room temperature before using.

there is a bbq festival in a park about a five minute walk from my place. i picked up a half rack from one vendor and a pulled pork sandwich from another. ribs were just ok, but the pulled pork kicked ass. and im currently munching on a bag of kettle corn.

I'm roasting a pork shoulder along with sweet potatoes, russet potatoes, and carrots. I made deli-style macaroni salad earlier to have along with it. Probably make some string beans also.
