Tomorrow is going to be whatever's in the house as I'll be attending a wake and Friday's most likely going to be a peanut butter sandwich or diner food, depending on what folks end up doing after the rehearsal.

1 cup mustard 1 cup ketchup 1 cup brown sugar made in to sauce over Pork tenderloin with chili cheese Frito's sprinkled on top.....Right before serving so they do not get soaked....Lemon pepper asparagus with bacon..I know its Indiana..... Sweet corn from last years garden..... :wacko:

Mahi Mahi fish tacos on garlic herb tortillas. I baked the Mahi with a lil spicy fish rub, put it in the tortillas with some shredded lettuce, salsa, black olive and light sour cream. Good stuff and only about 250 calories for two of em. Yessir!

It will differ in taste and sometimes texture. Usually it has a "sharper" taste with a distinctive texture and after effect. Goat cheese goes well in everything from salads to a stuffed steak.

Garbanzo bean soup

* 2 cans of El Paso Garbanzo Beans
* 1 16 oz. can of whole tomatoes or 6 of your own home grown tomatoes
* 6 to 8 white potatoes cut bite size
* 1 green pepper cut bite size
* 1 bermuda onion chopped
* 1 lb. of bacon cut bite size
* 2 cups of chopped ham cut bite size
* 1 teaspoon oregano
* 1 teaspoon parsley
* 1 teaspoon sweet basil
* 1/2 to 3/4 tablespoon chili powder or red pepper to taste
* Throw in a few bay leaves
* Salt and Pepper to taste

Let all this simmer in a big pot, perhaps a crock pot, for 4 or 5 hours. Water can be added if you feel it is not producing enough of its own juices. Remember, the longer it simmers, the better "dew" it will have on it! Happy eating!

This past weekend was colossally awful in terms of food consumed ... I'm still recovering from being sick, so cooking anything more complicated than pasta was out of the question for quite a while.

Friday, we had pizza.
Saturday, we had diner food.
Sunday, we had toasted flatbread sammiches from WaWa. (Yum.)

Tonight, we will finally be making the long-awaited "Mexican Shepherd's Pie."

I had a Kobe Flat Iron for dinner tonight and was incredibly underwhelmed. It was my first taste of kobe beef, and while it was absolutely the most tender steak I've ever had, I was expecting way more in flavor. It was almost bland.

I'm gonna fire up the grill and put some Ahi tuna filets on it. I'll sear each side for a minute or so, jsut enough to put grill marks on it but leave the filets rare. Maybe a side salad, some wine and a valium and I'm good to go. I almost forgot about dessert. Hmmm.

I roasted a Hotel-style turkey breast (a breast with the wings still attached), sweet potatoes, homemade macaroni salad, and peas.

Last night was delicious steak, garlic-herb mashed potatoes and corn on the cob.

Tonight will be hot dogs, macaroni & cheese, green beans and carrots & ranch dip (Bolthouse Farms brand Yogurt Ranch dressing ... it has 60% fewer calories & 50% less fat than the next leading brand of Ranch dressing and the yogurt gives it a nice little tanginess.)

We haven't decided what to do for tomorrow. Hmmm....

Gonna to sear it up in the cast iron skillet to medium rare, saute some onions and peppers, put it into burritos and then grilling the burritos.

It's what I consider a "beginner" rye bread. I'm not up to cultivating a sourdough starter yet, so it doesn't have that tanginess that Jewish rye bread has but it is tasty nonetheless. The recipe makes two huge loaves, or three normal sized loaves.

Night before baking (the preferment):
1 pound all purpose flour (3 and 1/2 cups, I use unbleached flour)
9.5 ounces water (1 and 1/4 cups)
1/2 tablespoon salt
1/8 teaspoon instant yeast

Put yeast in water and stir. Mix the flour and salt together in a bowl and pour in the yeasted water. Mix until the flour is hydrated, adding more water if necessary. Cover the bowl with plastic wrap (or you can put the bowl in a plastic bag) and leave the pre-ferment out at room temperature overnight (up to 16 hours, if you need more time before baking then put the pre-ferment in the fridge).

Final dough:
10 ounces all purpose flour (2 and 1/2 cups)
6 ounces rye flour ( 1 and 1/2 cups)
12.5 ounces water (1 and 1/2 cups)
1/2 tablespoon salt
1/2 teaspoon instant yeast
2 tablespoons caraway seeds
All of the pre-ferment

Combine all of the ingredients except the pre-ferment in a mixing bowl (get a big bowl for this, there is a lot of stuff going in!). Cut up the pre-ferment into small pieces and mix or knead it into the final dough until they are thoroughly combined. I do it by hand, takes about 10 minutes, but you can do it in a stand mixer if you have one. The dough should feel smooth when done. Place dough into a greased bowl to rise for 2 and 1/2 hours, punching down or folding the dough twice during this time ( I let it rise for 45 minutes, fold dough, rise 45 minutes, fold dough, rise another 45 minutes).

Divide dough into two (for two loaves) or three pieces (for three loaves) and preshape each piece of dough into a ball. Cover with a clean towel and let the dough rest for 5 to 10 minutes, then shape the loaves. I make them oblong, some prefer football shaped. Experiment with shapes! Let the dough rise for another 1 and 1/2 hours on greased baking sheets.

Halfway through the final rise, preheat your oven to 450 degrees. When oven is ready, score the loaves. You can brush the loaves with a cornstarch wash and sprinkle more caraway seeds on top (the cornstarch wash makes the seeds stick, 1/2 teaspoon of cornstarch heated in 1/2 cup of water then use a basting brush). Place the loaves on the middle rack of your oven. Get a cup of hot water and throw it into the bottom of your oven and close the door (steam creates a nice crispy crust, I keep a shallow pan in the bottom of my stove so I have something to aim at). Bake for 20 minutes, then rotate the pans 180 degrees and bake another 20-25 minutes until the loaves reach an internal temperature of 200 degrees. Let the loaves rest a bit before cutting (you will hear the loaves "sing" as they are cooling, kinda sounds like rice crispies cereal). Slice and enjoy!

I cut the sweet potatoes into bite sized pieces, sprinkle with chili powder (whatever brand I picked up, usually McCormack), and lime juice (fresh or from a bottle), some kosher salt and pepper. I roasted them on 400 till they were crispy, about an hour (I made a lot of potatoes so I wouldn't have to cook for a few days). Before I put the potatoes in the roasting pan I greased the pan a bit with vegetable shortening so they wouldn't stick so much. A little drizzle of olive oil mixed into the potatoes for even browning never hurts either.

Last night we had grilled bison-beef burgers, corn on the cob and baby carrots (with fat-free ranch dip ... it's got the consistency of library paste and the aftertaste of sheetrock ... ewwww ... we've agreed that this stuff is shitty and we won't buy it again ever-ever-ever) ... and we have 3 leftover bison-beef patties frozen for a go-to meal at a later date.

Tonight, I don't know. It's still fucking hot outside, so maybe grilled chicken would be a good move.

i had some pizza like creation, on Naan bread, with mashed/spiced up avocado as the "sauce," pablano peppers, tomatoes, sauteed onions, black beans, and some mexican cheese blend.

if i do get stomach cramps, it will have been worth it.

Go for pork, that is what I am having. Pork medallions in a lemon, garlic, peppercorn sauce with julienne bell peppers over rice.

I worked really long hours yesterday so I didn't get to partake in the Cinco de Mayo festivities.
Before I went to bed this morning I bought and marinated a skirt steak with garlic, lime juice, some olive oil, cumin, a little cholula hot sauce and some black pepper.
I'm cooking it over the charcoal later. There'll be a skillet of sweet onions and peppers sautéing on the other side of the grill.
Add some tortillas, rice cooked with sofrito & sazon, a few Negra Modelos and it's fajita time.

Happy Seis de Mayo, everyone!

(I forgot the beer. I never picked it up. Can you believe that shit? Me...)

We should plan on doing fajitas next year ... mmmmmm .... fajitas .... (I use flank steak in mine with a marinade from Bobby Flay, I think ... I may hate the bastard, but, damn, that marinade is tasty) ...

As it was our anniversary, we went to the diner. We had a grilled chicken quesadilla for an appetizer; he had chocolate chip pancakes and a side of corned beef hash; I had a "Tijuana Steak Wrap" which was sliced skirt steak with cheese and a dipping cup of mole sauce.

Tonight, I think pasta is the way to go because I am still exhausted from being out of it this weekend and tomorrow is STEAK.
