I purchased a make from the bag pasta fagioli yesterday morning, expecting to make it for dinner that night, based on the fact that I was thinking it would only take an hour or so, but apparently it needed to simmer for 3 hours and since we didn't wanna eat at 10 I made it and we'll have it tonight.

I was tasting it along the way and it's not bad.

They provided the seasonings, beans and pasta and all I had to add was beef stock, water, onion, carrot, celery and garlic.

It's a staple in the thebartender house.
Sauteed chicken breasts cut up, seasoned, floured and browned.

diced onions, peppers & garlic cooked in the same oil then deglazed with chicken broth & some water + 1 packet of Goya Sazon (con achiote)

added rice and the browned chicken back into the pan

covered, until rice was done and broth was soaked up.

& now it's in my gut mixing with a little hydrochloric acid, sauvignon blanc, and some Cholula hot sauce.

I'm just fat enough to consider making some popcorn on the stove for a 10 o'clock movie.

Just browned the London broil and sausage for Sunday's Chili. Mixing up the ingredients tonight..then into the oven for a long slow cook of about 12 hours. Adding beef broth/chocolate stout after 6 hours.
Sooo tonight I feel like some Grilled Shrimp an Scallop kebobs. The fish and veggies are already in the marinade.

We have a great place in town. Michaels Roscommon House. Their burgers were rated in the top ten by the Munchmobile crew. The pizza is excellent and the Jersey wings rock! They have fish and chips. I haven't had them. I think I'm going to try them next time we go there. For St. Pats day the make 800 lbs of corned beef. I HATED corned beef until I tried theirs. They even have a half way to St. Pat's party. So I get to have it twice a year.:smile:

I LOVE Wegman's Memphis style BBQ sauce ... it's actually a key ingredient in their recipe for meatloaf, so we still have about half a jar in the fridge, but Matty doesn't like it as much as I do. He prefers Kansas City style sauces and other sauces on the sweet side. I like a bit more kick or a vinegar bite, so I'm all about the Memphis and North Carolina style sauces!

For the pork today, I used the remaining half bottle of Trader Joe's Kansas City style BBQ sauce.

With cole slaw, biscuits and some rolls, we had a pretty complete dinner. (I forgot to make the corn, though. No biggie ... we had plenty of food and a decent amount of leftovers!)

It was certainly good eats!!!

Ended up going to McD's near Lodi, and the drive-thru kids were so polite and friendly I thought I'd hit a Chik-Fil-A by accident. Had the southern-style chicken meal (don't be hatin', I find it quite tasty).

Think I'll heavily hint to 8 to order from Irene's tonight.

They'd already made buffalo chicken dip and some stuff for the kids, and I didn't realize that there was chili until I'd already eaten a few more pigs-in-a-blanket than may have been good for me.)

It was certainly good eats!!!

The pork turned out the best I've ever made it. After searing it I gave it a generous coating of a bbq seasoning and let it cook in that for about two hours before putting on the memphis style sauce for another eight hours. Delicious.

And I just got done with the nachos. Excellent. I also used a whole can of jalepenos and topped it off with a hot chipotle salsa.

Ill probably be having pork sandwiches for dinner.

If it weren't for beans, lentils and peanut butter, I would have starved as a kid.

I should really amend that to he will eat some beans - black beans and green beans - but sometimes it's tough to get him to try new ones - navy or black-eyed peas.

Sometimes it's a texture thing (he hates kidney beans because they tend to cook up mushy) other times it's a flavor thing (he hates lima beans because they taste like mold ... but I don't like those either.)

Not enough eggs for a frittata, but we might have stovetop mac 'n' cheese ingredients in the house. How about using navy beans to make baked beans. My husband makes great baked beans in the pressure cooker, they are tender but not mushy and the cooking time is about an hour total. You just have to remember to soak them overnight. Lima beans can be a tough sell, I've had ones that I loved (I used to like when Cambell's put them in their vegetable soup) but I have had awful, mealy ones also.
I just got into lentils and I cannot get enough of them. I'm going to try a lentil chili soon.

If you get a pressure cooker, get one that also can be used as a regular pot. Ours is by fagor, and it came with a normal lid in addition to the pressure lid. I can also can with it.

Yes a great steakhouse, but here is my issue with Luger's.
The plate the meat is served on is so hot, that a medium-rare steak becomes medium after about 5 minutes sitting on the plate ! (Am I wrong here ?)

I make my own pizza dough, it makes a lot of dough, but I freeze the rest in ziplock bags.

A Versatile Basic Pizza Dough

This is the Neo-Neapolitan Pizza Dough from Peter Reinhart's American Pie. It is a low-yeast, slow-rising dough with enough suppleness to make it easy to work with. I find it to be the most versatile dough recipe I've come across.

At the end of this article I will talk about how to modify it to better match your preference in pizza dough style. But, first things first:

The Dough:

Makes 4 10-inch pizzas
5 cups all purpose flour
1 Tablespoon sugar or honey
2 teaspoons salt (or 3 1/2 teaspoons kosher salt)
1 teaspoon instant yeast
2 Tablespoons olive oil
1 3/4 to 2 cups room-temperature water

Combine all of the ingredients in a large mixing bowl and stir vigorously with a wooden spoon or mix in an electric mixer. After you've combined all of the ingredients, set the dough aside to rest for 5 minutes. Stir again for 3 to 5 minutes, adding more water or flour if necessary. Generally speaking, you want the dough to be wetter and stickier than your typical bread dough. It should be dry enough that it holds together and pulls away from the side of the bowl when you mix it, but it doesn't need to be dry enough to knead by hand.

Divide the dough into 4 pieces. Place each one into an oiled freezer bag. I just squirt a couple of sprays of spray oil into the bag. You can also brush the outside of the dough with olive oil and then place it into the bag. All that matters is that you be able to get the dough out of the bag later.

If you aren't going to bake them that day, you can throw the bags into the freezer. They'll stay good in there for at least a month. The evening before you intend to bake them, move the frozen dough balls to the refrigerator to thaw.

If you intend to bake them later that day, place the bagged dough balls in the refrigerator. Remove them from the fridge and let them warm to room temperature an hour or two before you intend to bake them.


For 2 of us I used 1 piece of dough, but you can make more just as easily. 1 piece of dough made about 20 small knots. Heat oven to 400, roll dough out into a rectangle (it doesn't have to be perfect). My husband likes his garlic knots on the small side, so I cut the strips and then cut each strip in half again. But you can make them as big or small as you like, the bigger they are the more chewy they will be. I make a simple knot, and tuck in the ends as much I can. Put them on the middle rack for about 20 minutes, until they are golden brown.

While they bake, place some butter and olive oil in a small sauce pan (for 20 knots I used quarter of a stick of butter, with 2 tablespoons olive oil), freshly minced garlic (I used 3 cloves), about a tablespoon each of dried basil and parsley, half a tablespoon of dried oregano, salt and pepper to taste. Heat through till butter is melted.

When knots are done, put in a big serving bowl and pour the butter/oil mixture over the knots, tossing to coat. You can reheat leftover knots in a frying pan over low heat with a domed lid on top, they don't dry out this way.

I've never had a bad meal there. Get anything, but I highly recommend the seafood. Whatever's fresh. (I've had their grilled swordfish several times but I also enjoy the sea bass. Oh, and oysters. Yum.)

Last night I grilled flank steak that was marinated (7 hours in fridge) in:
heavy soy sauce,
worcester sauce,
lime juice,
and
wasabi

then I put them on skewers as a satay and made my own fresh peanut sauce

That was served with, sticky rice and edamame.


Tonight, I think it's chicken leg quarters over charcoal and roaster red potatoes in a skillet and french cut green beans.

Take 3 pounds of chicken, skin it, dip it in skim milk, and coat it with crushed rice crispies or cornflakes (I opted for cornflakes). Put in crockpot, sprinkle with salt & pepper, and cook on high 3 and a half to 4 hours.

I'm also making sour cream and chives mashed potatoes to go with.

I'm going to have at least 3 of those rolls per day it seems in one way or another now ... I scurried out of the party with the entire paper bag full of them - dismayed to find that my sister in law took about 1/3 of them before leaving. Yesterday's dinner was mostly junk food - nachos, chips and leftover dino-shaped chicken fingers.

Tonight's dinner will be slow-cooked pork loin & onions in BBQ sauce with leftover mashed potatoes, green beans and homemade stove-top macaroni & cheese.

Tomorrow will likely be pasta of some sort, but we haven't decided that for sure yet.

Mom & I went to Lee & Mt Fuji's in Peterborough. I'm still ridiculously smashed from the Zombie I had with dinner (my tolerance is legendarily low), which consisted of spicy dumplings with peanut sauce (very good), coconut fried rice (meh), and shrimp pad thai (OK, but I've had better).

Since i have been dieting I have not made too much great food (down 40 pounds so its a fair trade) but last night i made really good sole with white wine and shallots. Tonight ground turkey taco meat with basmati rice and beets with onions and white vinegar. YUMMMY

Not really.

Flounder is too bland for me, but it plays well pan-fried with dill & lemon.

Tonight I'm having either homemade Taco Soup or BBQ Chicken Casserole. We made meals for the week on Sunday. They're both yummy!

Crumbled bacon and 2 poached eggs over a big bowl of baby greens salad with maple/poppyseed dressing, and a toasted portuguese roll. Eggy, leafy, bacony magic.

They probably don't even know what it is.

The walleye that I am going to eat is stuff that I have caught. The ironic part is that the walleye is the MN state fish. The walleye that you eat in restaurants comes from Canada because of commercial fishing laws.

Tonight I cooked a nice Smithfield ham (Got a 6 pound ham for less than 6 bucks!), mashed potatoes, and a veggie mix of corn, carrots, broccoli, and baby corn. Tomorrow is leftover ham, and split peas cooked with the ham bone and some Lawry's cracked pepper seasoning salt.

Last night was the last of the leftovers from Monday's Crock Pot pulled-pork (which was in itself a slight variation on Tall_James's suggestion to add a sliced onion ... and I added a dash of cumin for a little extra smokiness, along with some salt & pepper, which I hadn't added last time) ... I had a sandwich, Matty just ate the rest of the shredded pork with some tortilla chips. (Which, truthfully, isn't that bad of an idea.)

Tonight, I think, will be penne vodka from a Rachael Ray recipe. I just have to stop off and get shallots on the way home.

The best homemade chicken noodle soup with huge carrotts, celery, fresh herbs, 2 rotessary chickens and finished off with alot of heavy cream. I usually dont care for this soup but the cream made it.

I made mussels for the first time this week - one of the best things I have ever cooked in my life - and it took me about 20 minutes total cooking time (although I wasted 30 minutes before making sure the mussels were all closed & cleaned etc...

Its just butter, shallots, white wine, and parsley... amazing.

Had a #13 Italian from Jersey Mikes fixed Mike's Way with banana peppers, Jalepenos and a thin layer of mayo. Heated up in the oven and garlic dill pickle strips. One of my favs.

Last night I made some very tasty fajitas. Used a poblano pepper instead of a bell pepper and diced up two habaneros and threw those in with the peppers and onions for a few minutes. They were a little on the spicy side but I loved them. Lots of flavor from using the two different peppers.


Tonight my chick is making chicken korma and basmati rice. I can't wait, its one of my favorites. Too bad we don't have any naan.

Fixed a crock pot beef roast - with taters, carrots and onions. Even added some stewed tomatoes, fresh garlic and herbs. Cooked on low for 12 hours - pretty good.

I'm making Split Pea Soup in the slow cooker with three different types of pork (carrots and onions sauteed in bacon fat, a whole ham hock and a whole kielbasa).

I'm going to bake a loaf of french bread (from Pillsbury) and pour a large glass of wine.
