Went to Lee & Mt Fuji in Peterborough; I had the age tofu and the Marlborough roll (a special roll with avocado, cucumber, and crabstick on the inside, spicy tuna on the outside, and topped with a sweet sauce & crunchies). Very good stuff.

The aforementioned chicken soup turned out very nicely.

It became kind of a "refrigerator Velcro" type of recipe while I hunted for the carrots I had left over from pot roast on Sunday.

I got to use my Le Creuset enameled cast iron soup pot that's been sitting in my in-laws' house for over 2 years, seeing as how it was an engagement gift that we were unable to start using right away in our apartment.

It is THE best pot I have ever owned.

Enchiladas are so underated. I love them. Do you make your own sauce? Tell me how you go about making yours.

Mine are just sauteed chicken, onions and peppers wrapped in tortillas. I put them in a baking dish with reduced tomato sauce seasoned with cumin, chili powder and Cholula pepper sauce. Cheese on top and bake.

I actually did find a recipe that called for a rooster. I have no idea where I could get one. I got a whole chicken cut up from the butcher. It came out pretty good. The meat just fell off the bone. Next time I'm going to add more wine.

you should use some garlic vinegar, ginger, corriander, white wine and some oil to make a killer marinade. let sit for 30min - 1hr and then if you can grill, if not pan sear with scallions and butter. pour your remaining marinade and make a roux to serve over top the pork on white rice.

I just put tilapia in the oven with tomatoes and black olives that have already been fried up with garlic in a frying pan. There is a grocery store in Brooklyn, Provisions, that has the best tilapia. I had never heard of it before I started shopping there. It's very nice white fish.

ive had a really messed up schedule lately with working nights so i just had my "dinner". i marinated a pork tenderloin in some olive oil, juice from one orange, chopped garlic, and fresh oregano. i cooked that in a cast iron skillet and when finished sliced it thin and made cuban sandwiches out of it. very tasty.

I've got a chicken with a beer can stuffed up its ass on the grill with some pear wood smoking. (2 bay leaves and some rosemary and 1/2 the beer steaming in the can, Olive oil, s&p rubbed inside and out of the chicken). It should be ready in about an hour.
Going to have it with yellow rice and maybe a little hot sauce.

Tonight's dinner featured a large salad (arugula, romaine, carrots, sun-dried tomatoes and green & red peppers) and lasagna (recipe's on the back of the Barilla no-boil lasagna noodle box) with peppermint cheesecake brownies for dessert because we hosted my family for a pre-Christmas-Christmas get-together. Everyone loves my Barilla lasagna.

We also had a lovely pitcher of hibiscus sangria from a recipe I found online. Yum! And very festive!

Went to a little BBQ place in Westport CT yesterday afternoon.

Just had appetizers :

Bleu Balls ( bleu cheese rolled in bacon & then deep fried ) - not too good/bleu cheese too strong

Cheese Fries - nothing special, not enough cheese and what cheese it did have was lumped on just the top fries

BBQ Nachos ( nachos covered w/ pulled pork, cheese, etc ... ) - very good, pulled pork gave it a nice texture

They're kind of similar to pinto beans, but a bit more earthy in taste. I hear they're great cooked with ham hocks, but I usually just eat them plain or slightly seasoned.

Tonight was "refrigerator velcro" quesadillas featuring leftover pork chops, steak and potatoes ... which we supplemented with a bit of shredded rotisserie chicken and (no joke) orange chicken from the takeout Chinese food place. (No joke; we were inspired by our recent dinner out at Chino Bandido (http://www.chinobandido.com/).)

Matt's parents were impressed by the ease and efficiency with which we prepared the meal, and both commented on how delicious they thought the quesadillas were.

This is after a week spent sampling some of the more offbeat restaurants that the Phoenix-metro has to offer, including some of our tried-and-true favorites.

I bought some 99 cent flavor packet to make General Tso's Chicken. I did that, and made some egg fried rice with frozen green beans in it. It was pretty freaking good.

Tonight was hot dogs and macaroni & cheese (from a box; we didn't have evaporated milk!)

Last night we had Chicken Adobo (recipe from Mark Bittman) and rice, tonight we had ribeyes.

Mark Bittman's Chicken Adobo
1 C soy sauce
½ C white or rice vinegar
1 C water
1 T chopped garlic
2 bay leaves
½ tsp freshly ground black pepper
1 whole (3 - 4 pounds) chicken, cut up, trimmed of excess fat, then rinsed and patted dry with paper towels, or use 2 pounds bone-in thighs

1. Combine the first six ingredients in a covered pot large enough to hold the chicken in one layer. Bring to a boil over high heat. Add the chicken pieces, reduce the heat to medium-low and cook, covered, for about 30 minutes, turning once or twice. (You may prepare the chicken in advance up to this point; refrigerate the chicken, in the liquid, for up to a day before proceeding.)
2. Start a charcoal or wood fire or preheat a gas grill or broiler. The fire need not be too hot, but place the rack just 3 or 4 inches from the heat source. (We did the broiler)
3. Remove the chicken and dry it gently with paper towels. Boil the sauce over high heat until it is reduced to about 1 cup; discard bay leaves and keep the sauce warm. Meanwhile, grill or broil the chicken until brown and crisp, about 5 minutes per side. Serve the chicken with the sauce and white rice.

I got a dutch oven for Christmas (not the one with the blanket)

beef bourguignon (minus the Burgundy...I only had some Pinot Noir in da house)
carrots, baby red potatos, pearl onions, chuck roast, mushrooms, a bottle of vino, orange peel, bay leafs, thyme, garlic, beef broth, a few cloves, peas, and some other stuff.

Floured and browned the meat in oil & butter, deglazed the pot with the vino and put everything except the veggies in and simmered for 2and a half hours. then vegs and potatos for a half hour at the end.

I was pissed because I didn't have any egg noodles or "real" bread so I toasted up a couple of those martin's potato rolls for hamburgers to sop up the gravy.

I just ate and I am fat, warm and happy. Wine and stew on a cold night...FTW!

I read his "The Minimalist" column weekly in the NY Times Dining & Wine section. (They also gave him a blog - "Bitten" - but I don't like that half as well as the column or the recipes.)

I also watched one of the video demonstrations he did for these frozen fruit pops this past summer (those things would be AWESOME, by the way) ... and I gotta say, I have to agree with you.

We usually had two meals a day. Lunch or breakfast was about 10-15 bucks. Dinner was usually at a sit-down place, with drinks and tip.

For the stuffing I use crushed Corn Flakes, 1 egg, small can of tomates, garlic powder, salt, pepper. Fry em in the pan until the outside of the pepper skin starts to char slightly.

I got a little lit up during the Eagles/Cards game and decided to burn some charcoal and made a roast chicken (yes it's snowing).
I put a couple of potatos in foil with salt and baked them on the grate. When I took the chicken off I put 2 peeled and sliced apples with butter,brown sugar, and cinnamon in foil and put them on the grill. I am now eating one over a scoop of vanilla. :smile:

The hubby made penne alla vodka from scratch. Hands down the best I've ever had. Paired nicely with freshly grated parmesan cheese and crusty bread. Set up our dining room table with a fancy tablecloth and napkins; it was a nice dinner.

Last night ended up being leftover stew because I was tired and Matty was sick.

Tonight was turkey meatloaf.

Tomorrow will probably be steak and potatoes.

Thursday might be slow-cooker pulled pork before the 2lbs of pork loin I bought goes bad. I don't quite know yet.

I got some boneless wings from Wings Over.... Got them in Sweet Onion BBQ and Texas Mesquite. mmmmm.

Last night was leftover lasagna.

Tonight will be a new recipe I'm trying for Chinese ribs:

3 to 4 lbs pork ribs
1/4 cup soy sauce
1/4 cup orange marmalade or apricot preserves (I opted for apricot)
1 Tbsp ketchup
1 (or more) garlic clove, crushed

Mix soy sauce, marmalade or preserves, ketchup and cloves. Brush sauce on ribs and place in slow cooker. Pour remaining sauce over ribs and cook on low 10 to 12 hours.
