I just got done making Potato & Leek soup. I used heavy cream instead of light. It tastes soooo good. Got some great bastone bread for dunkin'. I can't wait!

We have a panini press that we've used once. The crockpot started getting a lot of use during the last month of my pregnancy; my husband's favorite recipes are the ribs and pizza-in-a-bowl (not to be confused with pizza-in-a-cup).

Homemade chicken noodle soup thanks to a recipe from the website I posted in the slow cooker thread. Any time I've ever made chicken soup in the past, I've just winged it. Sometimes it works out, sometimes it doesn't. This recipe sounds like it will be pretty damn good.

Takeout from a place closer to the apartment where we used to live than it is to our house.
It's a local business, real meat, menu of ... 30 or so different burgers, plus a half-dozen turkey or chicken burgers, as well as appetizers and entrees. All good, resonable prices and they do a good breakfast on weekends.
For the burgers, they take 2 patties and put the "toppings" in between and on top of them. It's served on a brioche-like bun.
Since they've been open, I've tried a good number of the burgers ... Saturday, I had the "Rowdy Reuben Burger" which is 2 beef patties, coleslaw and swiss cheese with a French dressing sauce. (OK, it should've been sauerkraut to reallly be a Reuben, but whatever.)

It's time to make room in my freezer for Thanksgiving. I took out some shrimp, a roast pork, keilbsa, burgers, filet mignons and chicken cutlets for the week. I think I'm going with the cutlets tonight. Bread them and saute them. My shopping order tomorrow is going to be alot cheaper than usual. :thumbup:
My chick made some fantastic Shrimp Gumbo last night. Okra, peppers, onions, zucchini, garlic, bacon over rice. I shall reap the leftovers.

I think I finally got it exactly right. It's so nice to have a level stove where the burners heat evenly!!!
Tonight is probably going to be heat-n-eat pizza rolls because I have plans with friends from back home after work today, although it was going to be Giada chicken parmesan (http://www.foodnetwork.com/recipes/giada-de-laurentiis/chicken-parmesan-recipe/index.html) with spaghetti. (Super-easy recipe, BTW. And I can make the marinara sauce now that I have all my tools in the house!!! I think I will take a Sunday afternoon or evening to do that, though. In the meantime, Wegman's jarred sauce is good enough.)

I bought hot and sweet sausage. I chopped up onions, peppers, mushrooms, garlic and potatoes. I added some chicken broth and white wine. Also added Italian seasoning and grated cheese. Put the oven on 350. Bought some great Italian bread. The sammies should be ready by 6ish. It smells great so far!:thumbup:

I've got a sauerbroten in the crock to go with the spatzles I plan to make when I get home.
I'm also going to pre-make (I do everything from scratch, wheee) some gnocchi for tomorrow, probably make that with a meat sauce (my tomato sauce does not come from a jar or a can, yeah, i'm pretentious, but anything from a jar or can tastes bleh).

Try butternut squash risotto. Takes forever, but worth it. Link to a fantastic recipe. It is important that you use fresh grated parm and not the crumbles. You need it to melt. Also, instead of a small onion, i use 2 shallots.

Hers is cubed beef. Pan seared then put in with the magical brown gravy she makes, onions, garlic, sour cream and a couple of other ingredients. That cooks for a couple of hours getting nice and tender. It is served over egg noodles.

I make something similar...You cut up steak in to cubes, roll it in flour and cook till brown on the outside in a pan...then cook it in a crock pot w/ cream of mushroom soup. Serve over egg noodles. (thats the short version, but you get the idea)

I love hungarian kettle goulash.
The best I ever had was in Hungary up in the vineyard of a friend of the family overlooking the Balaton. We sat outside and cooked it right there over fire in a kettle, all fresh ingredients, fresh garlic, onions bell peppers potatoes ... sat for hours drinking white wine from fresh from the barrel, snacking on fresh white bread with fresh garlic and hungarian hard salami... did I mention overlooking the lake??? It is one of my fondest memories from growing up.

I was all about that video until I saw the red sauce.
Try this:
Cut 2 lbs of sirloin tips in to Med. size chunks
In crock pot
2 cans of cream of mushroom
2 cans of water
1 envelope of lipton onion soup mix
salt and pepper
Roll each tip in flour until covered
In a frying pan cook until lightly brown (use butter or oil)
Once browned, put the tips in the crock pot...Mix well and cover....Stir periodically
Mixture will darken over time
I like it best over egg noodles, but you can also do it over mashed potatoes

ok i invented a recipe in my mind the other day and i tried it today. it was so AWESOME
ok i do have 1 controversial ingredient that i will reveal at the end (cuz i didnt add too much of it)
ok so the supermarket sells this fresh "Pico de Gallo"...its like, all the vegetables in Salsa (diced tomatoes, peppers, jalapeno, cilantro) but none of the salsa sauce..so its just diced vegetables
I added that, and these "Feta stuffed olives" to linguine (those olives are awesome too). it was sooooo good that i didnt even have to add the "Pesto sauce" i bought..it needed no sauce! it was so good
now the controversial ingredient. I added some "anchovies wrapped around capers". I like it! but u dont have too. It was so good

I cheated tonight and did one of those frozen Bortoli meals...Spinach and Rigota cheese raviolis in a skillet for 15 minutes.
It was damn good, being drunk may have helped.
Last night me and my chick made 2.5 in thick cut pork loins. I made a nice balsamic glaze and had it with rice pilaf.
BTW - I highly recommend getting a probe thermometer. I threw the loins in the oven, set the alarm for 160. Took them out when it beeped, let it rest for 10 minutes, perfectly cooked and juicy.

I used to make this shit all the time. I lost the recipe I had and it took me awhile to find this, hope you enjoy.
SAUSAGE PILAU - MINORCAN

1 lb. smoked sausage OR 1 lb. fresh link sausage OR 1 lb. kielbasa sausage
1/4 lb. diced bacon
1 lg. onion, diced
2 stalks celery, diced
1 bell pepper, diced
1 (16 oz.) can tomatoes
1 c. rice - converted
1 (6 oz.) can tomato paste
Chicken stock
1 bay leaf
1/2 tsp. thyme
1 datil pepper
1 tsp. sugar
Salt and pepper
Fry down sausage with a little water to remove grease. In another pot (cast iron) brown bacon, add onion, celery and bell peppers, on high heat. When onion is transparent add tomatoes and tomato paste until browned and thick. Put sausage in tomato mixture and simmer 30 minutes with seasoning. Add rice, proportion should be 1 part rice to 2 1/2 parts liquid. Add chicken stock to make this proportion.
Bring to boil, turn down heat and simmer (approximately 25 minutes). Stir once in a while, if too dry add stock, if too wet simmer longer. Remove from heat and cover until rice is done.
Variation: Shrimp Pilau - use 1 pound shrimp. Same sauce. Add peeled raw shrimp, cut up at same time as rice. Do not over cook.
You'll see that it says Datil pepper. This is a pepper that is hard to find. I've only seen them sold in FLA. So substitute your favorite pepper.

Marinated salmon filet and egg noodles. The salmon was frozen from Sam's Club but it's pretty damn good. Individually wrapped, marinated and frozen. Pretty decent.

I also got a rotisserie chicken so Matty has dinner tonight, too. (I will be out at an alumni association meeting.)

Imight run some filet mignon across the grill tonight. Maybe slice one up put it on top of a salad. I'll hit him with some fresh cracked black pepper and a lil sea salt before grilling em up to perfect medium rare. Holy crap, I'm excited. Gotta go watch the Razorbacks beat Mississippi State for now. Hopefully, I won't get too drunk to cook...or at least too drunk to drive to the butcher. I made my wife angelhair with my ratatoulie that I made earlier in the day (see recipie in this thread) and I made myself turkey tacos with refried beans.
Cooked myself a turkey meatloaf for the rest of the week that is really good and simple.
2 packages of 99% lean ground turkey
1 cup salsa
2 tbs sour cream
2 cups seasoned breadcrumbs
mix all together and shape into a loaf and cook at 350 for 1 hour (appox)
I have been hard core dieting and working out (15 lbs in 3 weeks) and the ground turkey is great low fat low cal protein that you can make anything with

It's one of my super-easy staples for meatless dinners. I've been making it in a nonstick wok (Ikea Pyra (http://www.ikea.com/us/en/catalog/products/10112375)) for years, but actually have a pan big enough for it now, so I will be using one of my new pans to make it instead of my wok.
Also, if you like it with a little bite, add about a half-palmful (I guess it'd be roughly 1/2 tbsp., but you can add more or less to suit your taste) of crushed red pepper flake to the shallots & garlic before you add the vodka.
And since I couldn't always find chicken stock when I started making this dish, I've been using Pacific Organic Free-Range Chicken Broth as a substitute; both the regular and reduced sodium work just fine. (One of the reasons I stuck with Pacific Organic is that, in addition to their 32 oz. UHP containers, they also sell a 4-pack of 8 oz containers for around the same price-point, making it extra simple to measure out the broth ... 1 container = 1 cup. Love that!)

I'm slicing it after I grill it and then I'm putting it into fajitas with sauteed onions & peppers. Yellow rice with sliced olives on the side. I cook the rice with a packet of this stuff; it's so good!

I tried a "new" technique for getting garlic flavor into the mashers - steep a smashed garlic clove in milk (or, in my case, fat-free half-and-half) until the milk is hot. And the mashers came out nice and creamy ... chunked up russet potatoes, salt, pepper, butter and garlic-infused milk ... I felt like a professional chef.
And the meatloaf recipe I got from Wegman's. The only changes I made were using ground turkey instead of ground beef and using more onions than the recipe called for ... but since the turkey has less fat in it than the beef, the additional onions seemed to work out.
Tonight, we're not sure what we're eating.

It sounds so much easier than roasting the head of garlic. Squeezing the cloves in the potatoes is cumbersome. I never get enough of the richness from the garlic. Thanks for the tip!

Wednesday night was cilantro-lime turkey cutlets with Santa Fe blend frozen veggies and salad.
Last night was lasagna made with ground turkey breast. I got the recipe from the back of a box of Barilla brand no-boil lasagna noodles and took the flavor up a bit by mixing chopped fresh thyme and parsley into the ricotta and pre-seasoning the turkey breast with salt, pepper and dried herbs (Italian seasoning combo.) I assembled it Wednesday night in a Gladware "Ovenware" container so that I have ZERO cleanup of baked-on cheese ... and a handy-dandy cover to keep the leftovers in the fridge.
Tonight we think we're having pizza.

Last night, we had steak, mashed potatoes and green beans.
We have leftover steak for lunches today and tomorrow.
I guess I did an especially good job on the mashed potatoes - 3 medium-sized russet potatoes, peeled & chunked, boil in salted water until a knife doesn't meet any resistance, drain, added butter, a little leftover ricotta (about 1.5 Tbsp.) and warmed "garlic-infused" half-and-half, more salt & pepper and some minced chives at the end ... yummy, fluffy goodness.
To quote the hubby, "that's a recipe you can post on RF.net"

We bought steaks for company. We had extra, so we made it all last night as we are cleaning out the fridge in preparation for thanksgiving.
They were BIG steaks. And we still have some steak left over.

I used a pretty cool trick to reheat my leftover Thanksgiving turkey tonight. Sliced it up, stuck it in a Colander and put some water in a pot and let it steam the turkey. Nice and warm and made it moist again too!
I guess you could use Chicken Broth too.
