And if there were, we'd pitch it. Trust me, after smelling someone's sauerkraut today, I am not about to impose broccoli on anyone tomorrow.

Much earlier in the evening I made some marinated skirt steak, sauteed onions, baked potatoes, and some steamed string beans.

the marinade:
soy sauce
red pepper flakes
cumin
3 shots of cholula hot sauce
paul newman's pink lemonade
olive oil
onion powder
and 4 cloves of crushed garlic...
whisked the shit out of that and put it in a ziplock with the meat.

It was Dy-No-Mite

I cooked the potatoes on the grill for about 50 mins. then I took the lid off and waited for the fire to get silly hot. 3-4 mins per side for the steaks. I sauteed one onion in the some olive oil and the boiled off the marinade on them.

We had from-scratch stovetop macaroni & cheese with a salad and broccoli.

We even have leftovers for lunch tomorrow.

BTW, I realized that having the mac and cheese TOGETHER with the brocolli as one dish is amazingly good. I was always grossed out as a kid seeing cheez-whiz poured on broccoli, but it's damn good eating with a REAL cheese sauce.

One-pot casserole. After you steam the broccoli, chop it fine and then put on top of the mac & cheese.

Or I could just use the pre-chopped frozen stuff and add it to the bechamel before mixing in the pasta and sticking the baked stuff in the oven.

Or I could just make a bechamel sauce to have with broccoli.

Tonight is my low fat Chicken Parm. No breading, no frying.

Coat the bottom of a casserole dish with sauce. Add thinly sliced boneless, skinless breasts.
Add a little chopped onion, oregano, garlic, salt and pepper. Cover that with more sauce.
Top with a healthy amount of shredded mozzarella. Seal the dish with foil.
Put in a preheated 350 degree oven and cook for 45 minutes.
Let cool for a while. (It comes out hot as balls)

Quick, easy and delicious.

And Resin, enjoy the meatloaf. As I've said, if you like it tonight, you will love it tomorrow on a sandwich.:thumbup:

It smells great so far and looking good. As a kid I didn't like my mom's meatloaf. She put green pepper in hers. I'm not a big fan of those. Both hubby and our tenant have been saying how good it smells. I'll have to check out that Chicken Parm recipe. :happy:

so as some of you may now, im trying to learn to cook. So i keep trying weird stuff that i make up in my mind

today i made something that was AWESOME

i marinated eggplant that i sliced and peeled. Then i cooked it on my skillet. As i was cooking it, i put tomato sauce and mozzarella cheese on top of it. So it was kinda like Eggplant Parm except not breaded and fried

it was so fucking good. And really cheap to make too!

I also added some of this hotsauce i bought called "Cameltoe"..i bought it cuz of its comical label (of a girl with giant visible pussylips in her shorts), but it is the best goddamn hot sauce i ever had..they add mango flavor to it. I want a case of it!

If you like a mango chutney, here's a simple recipe:

2 mangoes
finely chopped garlic
finely chopped red onion
finely chopped cilantro
fresh lime juice
a splash of olive oil
salt and pepper to taste

Goes great with chicken and pork.

Slice up some eggplant, zucchini and squash and toss it with olive oil, salt, pepper and oregeano. Bake it for 30 minutes at 350 stirring the veggies once.
Saute sliced onion, garlic, sliced red peppers and fresh basil then add chopped tomatoes and some tomato paste and my final ingredeant chopped peperioni. Let it simmer for about 20 minutes. When the veggies have baked for 30 pour the sauce over it cover with foil and bake 45 more minutes.
You can serve it as a side or over pasta or rice.

boneless chicken breast 1.10lbs stir fried in peanut oil, 1 orange 1 yellow pepper cubed sprinkle garlic powder black pepper and ginger
throw in some bamboo chutes, water chestnuts, chow mein noodles, and straw mushrooms
lay some stir fry sauce on it
...and stir fry.
'nuff said.

This is mostly because we felt horrifically bad by the time we got home from work and we just wanted to stay at home tonight. Painting can wait.

Since it was a little warm last night, I decided against making soup and made these healthy crab cakes for me and my chick. I was a little skeptical but I figured I'd give it a go. They were fantastic! And the healthy tartar sauce was better than regular tartar sauce. I used nonfat Greek yogurt in it.

One of the perks of having a death in the family is all the fantastic food people drop off. Tonight I had some great lasagna. Last night it was meatloaf and mashed potatoes. There's roasted chicken, chicken soup, shepherd's pie, apple pie, chocolate cake, a breakfast danish, etc... I hope this doesn't make me fat......er.

Woah, we did get a fruit basket with a bunch of apples. hmmmm...how do you make apple sauce?


2-4 poud of apples
4 slices of lemon peel
the juice of a whole lemon
Nutmeg
Cinnamon
a bit of salt

after washing, peeling, coring and chopping of the apples
add all ingredients to medium sized pot and let simmer on a stove for 30-40 minutes
until apples get soft.

take off heat and let cool

once apples are cool remove the peels ( unless you don't mind super lemony apple sauce)
Mash apples with a potato masher or one of those new wand blenders

The applesauce that you don't use can be stored in the freezer for up to a year.

I am cooking on my new Cuisinart Griddler. I marinated some zucchini and grilled them. I took a giant vidalia onion and sliced it thick and grilled that. I am grilling some red potatoes that I coated with olive oil and italian seasoning. I then will grill a few chicken breasts that I had marinading for two days.
Right now I am enjoying the scent of the onion caramelizing on the grill.

I don't really bbq it, I marinate it all day in bbq sauce, cube it, and skillet cook or grill it.
The higher the temperature, the better the outside is, but the inside will always be "squishy".

So, this weekend while frequenting my fav liquor store, the owner gave me a free bottle of Bud American Ale. I'm a miller chick, but who am I to turn down free beer? That would be just silly. Well, i popped that baby open to throw in the pan with the pork loin, I decided to sample it, and it's not too bad! I won't buy it, but i bet my dinner will be awesome with that in there :D

Man the smell is amazing and i cant wait until it's all shread on a nice roll with coleslaw. I love when a good slow cooker recipe fills the house with the aroma for 8 hours. My dog can't take it, though. He goes freaking nuts! That recipe sounds pretty good. I've never used loin for shredded pork. I'll have to give it a try sometime.

sounds great. i made it with a pork shoulder the other night and it turned out great. i used a bottle of memphis style bbq sauce, a little bit of honey, and salt and pepper. ill definitely add an onion next time i fix it. so easy and so delicious.

the loin turned out fantastic i am really impressed... today ill portion it out into freezer bags for my upcomming shifts. the onion just melted away during the slow cook adds a sweet to the tangy sauce. i didnt salt and pepper the loin which ill make sure and to the next time maby lil bit of garlic powder too.

I did end up getting the Mutton Chop, my wife got the T-Bone. It was friggin' fantastic. Keen's may be the most underrated steakhouse in NYC. I like it way better than Luger's (though I do wish they served the "bacon" that Luger's has).

Even the apps were great. She had a Lobster Bisque, while I had a spinach salad with hazelnuts, dried cranberries, goat cheese and vinaigrette. It was seriously one of the best salads I have ever had at a restaurant.

Mako shark was one of my favorite fishes growing up. And you can get steak cuts of it. It's great grilled, broiled, baked, sauteed ... pretty much any way you'd cook a steak, it's good.

Not that we had it all that often, and I really shouldn't have been eating it (v. high mercury content) but between shark and swordfish (also v. high mercury content) I don't know which I like more.

Of course, I'm not eating either any time soon, seeing as how they're pricey in addition to being polluted.

The were ridiculously good and really easy to make... Here's the recipe:

Ingredients

4 sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup extra-virgin olive oil, plus more for drizzling potatoes after cooked
1/4 cup honey
2 teaspoons ground cinnamon
Salt and freshly ground black pepper

Preheat oven to 375 degrees F.
Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, honey, cinnamon, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.
Take sweet potatoes out of the oven and transfer them to a serving platter. Drizzle with more extra-virgin olive oil.

anyone have a recipe for bacon-wrapped filet mignon? i've got the bacon and the filets, but not sure about the cooking method and time (i prefer it a touch past medium). i've seen a bunch of things online (stovetop, oven, broiler, etc). not sure which to use.

any advice would be most appreciated.

I don't know if you cooked them already but...

-just wrap the bacon around each steak and use a toothpick to hold it in place

-make sure the steaks are dry and at room temp & rub 'em with a little olive oil and liberally season with ground black pepper and sea salt.

-put a little oil in a frying pan (one without plastic handles, and prefferably NOT non-stick)
-get the oil just to its smoking point and sear the meat for about 2 mins a side (you want to get a nice brown crust on them)

-have the oven ready at 425. after searing both sides put the pan of meat in the oven (top rack) for about 5 or 6 minutes

-if you have an "instant-read" thermometer check the middle of the steaks for a temp of 145-150 (that should be about medium)
-the hot pan will continue to cook them so don't worry if it's too pink for you...just check again in a minute or so.
if you press on the steaks with your finger, "medium" will give the same resistance to the touch as the outside of the palm of your hand (below the pinky).

-Let them rest on a plate for 5 or 6 minutes before cutting.

you might want to use the drippings and brown bits in the pan to make a sauce for the steaks...maybe deglaze with red wine and cook up some shallots and mushrooms.

What a fantastic meal.
For any looking to try it, freshly caught salmon fillets marinated in Lamry's(I've never heard of it either) Ginger Sesame with Mandarin Orange Juice marinade(about 5 hours for me). 20 minutes baked in the oven.
Very tasty.

Last night was great. My chick marinated boneless skinless breasts all day.
Cooked up some fresh spinish. Sauteed the spinich in oil, garlic and chopped onions.
Put the chicken on the Forman Grill for around 4 minutes. Served on top of the plated spinich.
Looked and tasted wonderful.

Chicken parm over pasta w/ marinara

(breaded and fried chix breast, baked w/ mozerella 1/2 hour at 350 over pasta w/ sauce)

I had to bring it to work so it loses 10% deliciousness but still damn good.

Seriously, anyone ever have their "White Chocolate Raspberry Truffle" ice cream? It was the best ice cream i've ever had. So fucking good, the coldness felt good on my throat and i could not put the pint down.

I used my new indoor grill and first grilled some vidalia onions. Then I grilled some red bliss potatoes that I coated with olive oil and cracked pepper. Then, I grilled some zucchini that I did the same as the potatoes. Then I grilled some mushrooms. Then I grilled some marinated chicken strips and whole garlic cloves.
Holy crap it came out good!

thanks, joe! cooked the steak tonight and it came out great (actually, i ended up cooking it a few minutes too long, but still delicious). thanks for the tips. :thumbup:

for sides, i kept it simple with baked potato & fresh corn.

Made chicken enchiladas and some yellow rice. The enchilada sauce was too spicy for wifey but just right for Senor Joey!

I don't know anything about antelope but my brother has some good venison recipes, I imagine the meat's similar? I'll ask him when I see him tomorrow. I know he uses some marinade to get rid of the gamey taste which never made sense to me; might as well just cook beef then.

I HATE the gamey taste. I just don't understand why he makes such efforts to change/alter it's natural flavor. It's like he's trying to make it taste less like venison and more like beef, soo might as well just cook beef.

I think that maybe it's being implied that macaroni & cheese would be good, too, so I will just make one of the box-mix ones I have. (It's not as good as homemade stovetop mac, but it'll have to do until I find my evaporated milk.)
