I order out on weekends just because I bring my lunch and dinner to work everyday. Lunch consists of a sandwich (no doubt PB&J) and for dinner it's leftover pasta or Lean Cuisines I got in sale.

Tonight I ordered my favorite:

A portobello sandwich on foccachia bread and a caesar salad. Could I make it myself? Of course. It just helps with the sucky week that I KNOW is ahead of me.

EM I hate you right now. My old roommate made that twice and it was pretty badass. If you and your chick are ever in the indy area and you get busy for a day or so and want someone to show her around the area in trade for some decent food well...

I tend to buy the crappy tubs of "turkey" (2/$7) instead of going to the deli counter. I'd rather have better and cheaper (KEY WORD) ingredients.

We went out for my wife's birthday and I had Schnitzel and some sort of Beet salad. I don't know what was in the schnitzel but I enjoyed it thoroughly. Tasted like veal.

The Chicken:
one of the cheapest ways to buy chicken is to get it whole and do the work yourself ($1.09 a pound at my A&P.) here's how to get 2 meals out of it:

Buy a 3&1/2 or 4 pound bird and decide if you want to roast the whole thing or half.

Roasting-
rinse it, pat it dry, rub with olive oil, salt & pepper the whole bird (inside & out)-garlic powder, onion powder or goya adobo optional. Stick a half of a lemon and some fresh herbs inside the cavity.
On a roasting rack in a pan cook at 325 degrees for 45-60 mins. juices should run CLEAR. Maybe roast or bake some potato at he same time. let it sit for 10 mins and carve.

If you roast the whole chicken...eat half at dinner and use the rest of the meat for chicken salad for lunch.

If you roast half...save/freeze the remaing leg/thigh/breast/wing for a cacciatore out of your crock pot. (add a chopped onion to the bottom of the crock pot, then the cut up chicken pieces, a crushed clove of garlic, a bayleaf, some oregano, s&p, a small can of tomato paste, and a 1/4-1/2 cup of broth or water. Set it on low when you leave for work it'll be done when you get home (7-10 hrs). Serve over pasta.

Where's the Beef?:

buy a 1&1/2-2lbs flank steak or london broil,

Meal #1-cut half of it into 1/8in strips (against the grain) and marinate them in:
1/4 cup soy sauce, garlic, tsp. brown sugar, 1/2 tspchili powder, 1/2 lemon juice and a tsp of peanut butter.
after a few hours (or overnight) thread the meat on wet bamboo skewers and grill (use a grill pan if you have to. (you could also stirfry the strips with some veggies in a wok.)
Serve over rice.

Meal #2- cut the rest of the beef into cubes, dredge them in flour and just brown the cubes in some oil. you can use these for a beef stew in your crock pot. add mushrooms, onions, carrots, celery, potatoes and beef broth, a little seasoning and let it cook on low all day. When you get home just make some egg noodles and thicken the stew with some corn starch (mixed in water first). or just get some nice crusty bread on the way home and skip the noodles.

The chicken dishes probably cost you $2-3 a piece. The beef $3-4. and you'll probably have some leftovers!

Last night I grilled a pork chop and a couple chicken breasts. Hit the chops with a meddley of fresh cracked pepper corns...some red, white and black a lil bit of Cavendar's seasoning, hot paprika and some minced garlic before I grilled them and put 20 minutes of hickory smoke to em. The chicken breasts just got a lil salt and some cayenne pepper. Had a Ceasar salad and some stuffed mushrooms for an app. Ummm mmm good. A few cold beers and and a hot bowl or four and it was a good night.

I went crazy with garbanzo beans today. I made a hash with mashed garbanzo beans, onion, bread crumbs, egg, salt, tumeric and a little fresh parsely, mixed it all together and cooked it on a skillet. When it was almost done I melted in swiss cheese and mixed it in.... with a little sour cream on the side and it was great! It's a completely bastardized version of my mother's falafel recipe.

For tomorrow... Bone in NY Strip steaks, marinated in Stubbs marinade (never tried it before), baked potatoes, and Pillsbury frozen soft dinner rolls. (No. They're not soft until AFTER you cook them).

BTW... The marinade I usually use only takes about 20 minutes. This one doesn't say how long I should do it. Anyone have any suggestions?

I'm of the opinion that marinade should be done overnight... really let it soak in.

Once I let my lemonade pork chops marinade for 2 days - they were fantastic.

We had some strip steaks tonight as a matter of fact - heavy on the sea salt and cracked black pepper for me. Steamed broccoli and brown rice - then onto some quadruple lattes.

I was going for a good pic and the battery died on my camera. Stupid camera.

Hmmmm...this week's dinners were fun.

Monday's was cumin-grilled chicken breasts with A.B. stovetop macaroni & cheese and steamed yellow wax-beans.

Last night's was grilled strip steak with oven-roasted potatoes (Alexia brand - garlic, rosemary & olive oil flavor; YUM!) and corn on the cob (microwaved in a Ziploc brand "steam fresh" baggie; kind of screwed up, though because I misread the instructions.)

Tonight's will be grilled hot dogs and some sort of vegetable side. Possibly the remaining corn on the cob, but I haven't quite decided yet.

Tomorrow will be Taco Bake. (I think I will post that recipe in the Recipe Thread.)

Friday's dinner is still TBD. A lot will depend on what we have in the house.

It was dinner with just my wife and my 4 year old son so I made a "Caveman Dinner". Grilled terryaki marinated Chicken Legs, rice pilaf and steamed broccoli. I put a big pile of rice in the middle of the plate, surrounded by two chicken legs and broccoli plated to look like trees.

Then I put a small plastic dinosaur in the middle of the rice pilaf on all three plates. Kids love when you do stuff like that.

I now live a half-mile from a good butcher, so tonight it's a toss-up between a 12oz. boneless ribeye or kobe burgers. And tonight I'm determined to use the grill that the previous condo-owner left (it uses gas directly from the house), and plan on not blowing up anything.

Tonight it's a sub samich from a local pizza joint. Ham, Canadian bacon, salami and peperroni with some moz and cheddar, lettuce, tomato, mustard and mayo. Ummm mmm good. I've got the strep and nothing sounds good but I' betting this is gonna rock.

I did make myself some homemade chicken noodle for lunch though. Nothing special; an easy broth from water, bulion, salt and pepper with chicken tenderloins and egg noodles.

The grill was a breeze, it just needed to be cleaned up a bit. I went for the ribeye, with bakers from the kitchen--kept it simple. Tonight I'm going with the kobe burgers. I'd like to mix it up and try to grill some vegetables and chilis in the future. I gotta check out the grillin' thread.

If you're paying good money for those cuts, they should be tender enough without the marinade. In fact, a ribeye can go even longer on the heat (and stay tender) with its fat content. Enjoy the "steak" flavor of steak!

Go with a brush of olive oil and a good seasoning of salt and pepper then place them on a really hot grill. Save the marinating for the flanks, skirts, chucks & london broils.

Yeah, we ordered a bottle of Axum tej and Dukam red for the table. Good stuff, both. Someone from my party informed the ladies who served us that it was my birthday, and they had me get up and dance with them. This is a small family operation, and the gesture seemed pretty genuine, and as I was pretty inebriated at the time I obliged, although it was still pretty embarrassing. We're going back this weekend for a live Ethiopian band. It should be fun.

I read online that Cooks Illustrated suggests doing the opposite. setting the oven to 275, getting the internal temp of the steak to 90 degrees, then searing it. The reasoning is that by first bringing the internal temp up to 90 degrees, the final sear is able to give you a nice caramelized crust without the usual band of overcooked gray meat that sits just below the surface and the undercooked, often raw center that follows.

Yeah, I couldn't agree more, although not doing marinades that often probably is more a reflection of my laziness then anything else. But I do go for the "steak" flavor of steak. I like the simplicity of it. Sea salt, pepper, olive oil, that's it.

Melt 1 stick of margarine and add onions. Sauté onions. In a large bowl, mix SPAM, hash browns, sautéed onions, cream of chicken soup and cheese. Mix well. Pour into greased casserole dish. Melt 1 stick of margarine and mix with crushed crackers. Sprinkle mixture over casserole. Bake uncovered at 350 degrees F for 30 minutes. Serve with green salad.


Ingredients1 12-oz can SPAM, grated
1 30-oz. package frozen hash brown potatoes, thawed
1 can cream of chicken soup
1 16-oz carton sour cream
1 small sweet onion, chopped
3 cups grated cheese

But I am serving it on homemade flour tortillas instead of on hoagie rolls. And I also added in green pepper strips, I think it would be boring if it was just meat and onions. Also, string beans and homemade macaroni salad on the side.

Pork loin was on sale so we will inject it with some Tony C's Creole Butter, use some BBQ rub to crust the outside and roast it in the oven. Some sugar snap peas and with red potato oven roasted with a kinda cajun garlic sprinkle I mix up. Greens with oil and vin to start.

I like them especially because they don't have all kinds of processed crap in them ... and they taste good even if you forget to flip them halfway through the cooking time.

We haven't tried the onion rings yet. (I have to figure out a dinner where they'll go well.)

I haven't tried making the marinara sauce yet, mostly because I don't have a food processor at the moment and my blender is dying, so I use jarred sauce from Wegman's. (Oh so good. And cheap, too.)

Monday night, we had the Tyler Florence "Ultimate" recipe fajitas (http://www.foodnetwork.com/recipes/tyler-florence/fajitas-recipe2/index.html) with Spanish rice (from a box) and Southwest style corn (Bird's Eye Steam Fresh) ... mmmmm, steak. One reason I like this recipe is that it gives me a way to use up the leftover chipotle chiles from my black bean chili recipe (will post this later in the "wintertime foods" thread) ... the other reason I like this recipe is it gives me a reason to use a blender. (OK, so what if it calls for an immersion blender. I have one, but it's not very good. So I use a regular blender and it works just as well.)

Tonight is supposed to be hot dogs and Alton Brown stovetop macaroni and cheese (http://www.foodnetwork.com/recipes/alton-brown/stove-top-mac-n-cheese-recipe/index.html). I'm really trying to take AB's approach to gadgets, they better serve more than one purpose (for the most part). I'm not bothering getting a food processor, I have a manual one from tupperware that I use if I don't feel like chopping things. But for some reason, I love the immersion blender. I make a lot of sauce, so it gets a lot of usage. And it is also good for blended soups. I have a conventional blender, but it is ancient so I only use it for smoothies (you can smell the ozone burning when I use it, that is how old it is, but the damn thing still works).

Made Alton Browns Mussel Recipe last night for me and my chick. It was delicious!

2 tablespoons minced garlic
1 large leek, cleaned, trimmed, and chopped
Pinch kosher salt
3 tablespoons olive oil
20 mussels
1 ripe tomato, seeded and chopped
1 1/2 cups white wine
Chopped parsley

Hardware:
8-quart nonreactive, stainless steel stockpot
Metal colander or steamer insert
In the stockpot, sweat the garlic, leeks, and salt in the olive oil until softened over medium-low heat. Place the mussels in the colander and spray them with cold water to remove any excess dirt or grit. Remove any beards with a pair of needle-nose pliers.

Add the chopped tomato and the wine to the stockpot and turn the heat to medium high, and bring to a simmer. Insert the colander of mussels into the stockpot and cover. After 3 minutes, check to see if the mussels have opened. If some are still closed, cover the pot, and cook for an additional 30 seconds. Discard any unopened mussels.
Place the mussels in a serving bowl. Remove 10 mussels from their shells and add them to the stockpot. Using a stick blender or a bar blender, puree the mussels until the liquid is of a sauce-like consistency. Pour the sauce over the mussels and garnish with chopped parsley. Serve with a loaf of crusty bread.

Ok tonight was awesome. Half pork medalions cut down the side and stuffed with garganzola and baked apples (cinnamon of course). Broiled for about 12 minutes a side only seasoning used was sea salt and fresh ground pepper. Served with pepper sauteed pea pods.

We set up a picnic blanket in the family room in front of the TV and eat Pizza while watching a bad movie. Tonight its going to be the new "Speed Racer".

I'm not sure if its a good idea though. The movie seems seizure inducing.

BTW, we loved the movie! It was loud, colorful, splashy with lots of karate fighting, car racing and monkeys. The perfect movie for a family pizza night.

I just noticed how fucking tasty this sounds. I make mussels like this all the time, minus the pureed mussel in the broth part. Mussels fucking RULE. Low shell to meat weight ratio, affordabe price and godly taste. I know what's for dinner tomorrow.

I'll be mixing a pound of ground beef with a pound of pork sausage (from a local slaughterhouse), some blue cheese chunks, chopped onion, and pepper to make burgers on potato rolls.
I took this mixture to work and fried it up on the grill tonight. I gave the cook a bite, and he went nuts over it. He wants me to make some up for him, and said I should let the owner try it. He thinks it should be on the menu.

Took leftover chuck roast, shredded it, some leftover taco meat, jar of black bean salsa we opened over the weekend, can of tomato paste, beef stock, two Heinekens, chili powder, garlic, salt, pepper, oregano, cumin, liquid smoke, let the whole thing cook for four hours.



Ahhh, trashcan chili. Num, num, num.

He and all his friends up there had a "Thanksgiving dinner" type deal, and now my fridge is packed with food.
I've got to choose from pierogies, turkey and ham with stuffing and mashed potatoes and veggies, baked ziti and hoagies.

Last night was sausage & peppers ... I brought home FRESH MADE chicken sausages (sweet Italian style) from Wegman's with a package of soft Italian sub rolls, a Spanish onion and two green peppers.

Oh, and there was also a salad ... Italian escarole blend with shredded carrots and leftover Caesar croutons.

Tonight ... I'm not sure what we're having. Maybe stovetop macaroni & cheese.

Just got done. Great as usual. I got to use the broiler for the first time. That glaze rocks! I love the stove top. The meat just feel off of the bone. I'll have to check out broccoli slaw. I was lazy and went to the corner deli to get the cole slaw. Wasn't bad at all.

I made my own. It's not hard, just time consuming. Same with the pita. For a packaged mix get Manischewitz brand, it's quite good. Just mix it with a bit of water and fry them up.
ETA: I don't know if that brand is carried in Canada. Check the ethnic food aisle.

Tonight I'm making roasted chicken legs, with homemade macaroni salad. We are also having the baked beans Mike made yesterday in the pressure cooker. His beans rock.
