I used 1/4c to 1.5lbs of beef... I think I could have used a bit more. 1/4c to 1lb would probably be better.

Tonight's menu features pork chops. The question is how I cook em. It's supposed to come a turd floater roun here so I caint tell ye if I'munnah grill em or bake em. That was my hayseed for you. If the storm comes like the weather guy says I'll probably go with good ol Shake & Bake. If the rain stays away I'll put em on the grill with some corn on the cob. Either way they'll be yummy.

I had high hopes for tonight's dinner (http://www.elise.com/recipes/archives/004075basil_chicken_in_coconut_curry_sauce.php), but was disappointed. I have been eating a lot of Thai food recently, and it would be a lot cheaper if I could make the stuff at home instead of paying $12 for it at the place up the road. However, despite the long list of seasonings, this curry was actually pretty bland and we felt afterward like we had eaten nothing. I am sad. I murdered the last few leaves on my poor ailing basil plant for this?!

I had my doubts, though, going into it. I did not see any difficult to find ethnic sounding ingredients that have to be purchased at a specialty market on the list, and that is probably where I went so wrong. Without lemon grass, Thai basil and other crap you can't get at a regular supermarket, this recipe was doomed to fail. How can it have that special zip without all the special ingredients?

I just got a Thai cookbook at the library discard sale a week or so ago. I'm going to start some serious research this weekend. I need to figure out some important things for myself, such as what the fuck are these galanga things it calls for, and where does one buy them in a place like Kansas City? We have a big Vietnamese population here, so I'm hoping that one Southeast Asian's corner store is as good as another's.

Oh, and in defense of Simply Recipes, I have made other stuff from her site that I enjoyed. This is probably just a difference in personal taste.

I ate spagehetti w/olive oil and black pepper. Because I have eaten the equivalent of 2 cows in 4 days prior to tonight:
Friday...roast beef lunch and burgers at a friends,
Saturday...grilled skirt steak,
Sunday...Rib eyes at mother's day BBQ
Monday ...I worked a golf outing with a catered filet beefsteak for lunch

It's like red meat is seeking me out on a daily basis!:ohmy: I gotta eat a salad the size of my head tomorrow.:wink:

Last night's dinner was taco-bake (ground chicken breast, reduced sodium taco seasoning packet, can of black beans, low-fat 4-cheese Mexican cheese blend, layered between whole grain soft-taco tortillas) with a salad. There were leftovers today ... yay!

Tonight's dinner will feature beef stew from the crock pot (1.5 lb. bag of assorted "baby" potatoes, chunked carrots, celery & onion, stew beef, pot roast seasoning packet) over egg noodles. There should be leftovers.

[As a digression, I must say that I love my crock pot. It's got to be one of the best kitchen gadgets I've ever purchased, mostly because I actually use it relatively regularly and, since they re-designed them since the '70s, it's actually easy to clean. (And dishwasher-safe!)]

The other night I grilled up some pork chops using a simple soy and honey glaze I got out of a Bobby Flay book. 1/2 cup honey, 1/4 cup soy sauce, some red pepper flakes and ground pepper, glazing on some 1/2 thick pork chops.

They were delicious and my wife couldn't stop eating the glaze.

Next weekend, we're trying a Mesa Grill ribeye. Ribeye, with a honey/chipolte-mustard glaze with a pepper relish.

i fucking love shrimp from hibachi places. last time i was there, the guy cooked way too much shrimp and not many people at my table like shrimp. he started flipping them up in the air for me to catch in my mouth. i nabbed 7 out of 7 within 30 seconds. he made some sort of orca joke but i didn't care, i had a mouthful of tasty shrimp.

Sunday night, I made the ribeye from Bobby Flay's Mesa Grill book. Absolutely delicious.

The glaze for the ribeye was 1/2 cup of honey, tablespoon of chipotle puree, tablespoon of dijon mustard, teaspoon of salt, 2 tablespoons of canola oil. We couldn't stop putting it on the ribeye.

It's a regular burger with slice of ham, dill pickles, swiss cheese, dijon mustard and mayo. You grill the burger to medium rare, put in in the bun with the other ingrediants and then press the sandwich on the grill or a sandwich press for another 2-3 minutes.

I got the recipe (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_34412,00.html) from Bobby Flay's grill book. He won a burger Throwdown show with that burger.

And yes, you may have noticed that I cook a lot of Bobby Flay recipes. I love his food.

Place the tops of the bun over the pickles and cook on a sandwich press or wrap the burgers in aluminum foil and cook in a hot skillet over high heat with a heavy skillet placed on top of the burger to press the sandwich. oh man, these things are delicious! my side is sweet potato fries with a drizzle of honey.

this is the first time i used my sandwich press, which i got as a gift. it was a little bit small for the burgers, i had to rotate them three times each to get all sides deliciously grilled.

I bought some ground veal the other day to make over the weekend without thinking about how hot it was going to be over the weekend and how I wouldn't want to cook. I get nervous about keeping ground meat too long so this morning I made the recipe. Basically veal, onion, green bell peppers, garlic, spices, some tomato sauce, and simmered it in a dutch over for an hour or so until it got to the consistency I wanted. I took a taste and it was really good but it's too hot to eat something like that today. I took half and froze it and put the other half in the fridge. A couple of days from now I'll enjoy it.

Tonight I made lamb chops. I was looking for a non-mint recipe for lamb chops and came across this one. It was very, very good. After marinating the chops I took the leftover marinade and cooked it on the side burner while the chops were grilling. It was good. I'm going to try what's left on a sammich. Under this recipe were some comments that said to only marinate the chops for an hour to an hour and a half or the flavors start to overpower the lamb. I marinated for about and hour and fifteen and they were great.

INGREDIENTS
1/4 cup distilled white vinegar
2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon minced garlic
1 onion, thinly sliced
2 tablespoons olive oil
2 pounds lamb chops

DIRECTIONS
1. Mix together the vinegar, salt, pepper, garlic, onion, and olive oil in a large resealable bag until the salt has dissolved. Add lamb, toss until coated, and marinate in refrigerator for 2 hours.

2. Preheat an outdoor grill for medium-high heat.

3.Remove lamb from the marinade and leave any onions on that stick to the meat. Discard any remaining marinade. Wrap the exposed ends of the bones with aluminum foil to keep them from burning. Grill to desired doneness, about 3 minutes per side for medium. The chops may also be broiled in the oven about 5 minutes per side for medium.

Tonight I put about a 1-1/4 lb sirloin over some hickory and indirectly grilled it for about 40minutes to about a medium rare. Spread some garlic butter on a couple hogie buns and melted cheese on them. Slice the sirloin fairly thinly and served the steak hogies with an easy au ju. Fuckin A good boys n girls.

Ugh, I didn't see this until today.

I used to have a citrus marinade/glaze for salmon that's pretty easy.

It's pretty versatile ... and easy to cook. You could even cook it in a parchment paper "pouch" in the microwave...

Sheesh, dude. Even the grocery store should have cards!

(I like mine simple, myself. If you have a grill, get cedar grilling planks and just season it with salt & pepper before you toss it on the grill ... yum.)

Throw some lemon slices under that when you bake it (a few on top dont hurt either) and if you get something dry and white maybe spill a little on the fish. As for me I have no clue...maybe some chicken sausage with veggies in a farfalle.

I made herbed steak in my cast-iron skillet (toss some crushed thyme into a zip-top baggie, add 1/4 cup of extra virgin olive oil, salt, pepper & shake ... add your steaks and smoosh them around so that they're coated in the oil/herb mixture and plunk it back into the fridge for at least half an hour ... then leave them on the counter for 15-20 minutes to come up to room temperature before sticking them in the blazing-hot pan to develop a good sear) with homemade roasted potatoes (crushed thyme, chopped rosemary, salt & pepper, 1/4 cup of extra virgin olive oil in a zip-top baggie, shake to combine; add cubed, thin-skinned waxy potatoes, roughly 1" cubes so they all cook evenly. Let this sit in the fridge with your steaks. Roast in a 350 degree F oven for 25 minutes, then crank the heat up to 450 for 15 minutes; stir once to ensure evenly coated potatoes.) and corn in a foil pouch (wrap 2 fresh, cleaned ears of corn in heavy-duty aluminum foil, cut 1 Tbsp. of butter into smaller pieces and place around corn, sprinkle with salt & pepper; bake in 350 degree F oven for 20-25 minutes and leave sealed on stovetop until rest of meal is ready.)

If I hadn't over-cooked the steak, it would've been a great meal. (BOOO!!)

I'm gonna crack a cold beer, turn on the tunes, fire up thre grill and throw on a 10 oz. bacon wrapped filet on it. I'll cook it to a hot medium rare, bake some taters and load em up with butter, sour cream, cheese, bacon ooooo and maybe some sauteed shrooms on top of all that. Serve with a cold ceasar salad with it just after the beer and pills start to work together and it's a golden Saturday night on the back deck.

Wound up polishing off a plate of that pot roast with garlic mashed and stewed carrots that I was going to eat last night... cold. To tired to microwave... it was still pretty good.

Last night was bow-tie pasta, marinara sauce and chicken sausages from the butcher counter at Wegman's. (Yummy.)

Tonight will be pierogies with onions and peppers.

I won't use bacon fat to cook them this time, though. (It seemed like a good idea at the time!)

This was bought pre-marinated in a store on Brighton Beach. So I'm not sure what the exact recipe is. It did have onions in it as well.

We were going to do grilled lemondae pork chops with brown rice and veggies tonight but I had to skidaddle and leftover potroast was available... so I did that. When I got home later, I fired up the grill and did a burger and a dog. I've lost a bunch of weight lately so fuck it. I just eat ... I did a pint of Haagen Dazs Cherry vanilla like it was half a scoop in there.

We ordered 8 oz. 2" thick filet mignons, wasabi mashed potates and truffle butter from Allen Brothers. This meal costs us about $200 buckaroos. The filets look beautiful!! I CANNOT wait!!!!:clap:

pineapple teriyaki chicken:

I like this one a lot and it's easy - so figured I'd post the recipe...

Cut up some chicken breasts
Brown in EV Olive Oil and garlic
Add can crushed pineapple (or a some fresh if you have the energy)
Add 1/2 cup soy or teryaki and simmer 20 min.

Serve over brown rice
Broccoli side or stir that in toward the end so it's not soggy.

We had a grilled shrimp salad. Red leaf & boston lettuce, grape tomatoes, cucs, roasted red peppers, black and green olives, mozzarella, pepperoncinis and homemade croutons.

Bout a 10 oz Yellwotail fillet brushed with a lil extra virgin with fresh cracked pepper, hawaiian sea salt and minced garlic. Hit each side on a medium-medium-highish grill for two minutes just to get grill marks and hot pink center. It was pretty fuckin good. Just searing it like that keeps the moisture in and you can eat ith with a salad and some bread. Yessir! Oh yeah! A three layer chocolate mousse and white Russian for dessert. The vodka and valium are just getting to know one another.

I used a flax seed wrap from damascus bakeries (www.damascusbakery.com) and brushed it with organic Picual olive oil and broiled it until crisp. I halved a handful of organic grape tomatoes (would you believe, there was a study that just came out that said that organic produce usually IS healthier for you than conventional, in terms of nutrient content?) and sauteed them with some basil and oregano from my herb garden and some olive oil. I tossed them on the wrap, put some thinly sliced fresh handmade mozzerella from the Fairway around the corner (they have a new mozzerella station in the store where they make it in front of you throughout the day) and then on top of that, some organic arugula from Long Island. Broiled briefly. sprinkle of parmesan I got from my cousin in bologna.

dude. It was the best pizza ever. I made myself a second one and now I am STUFFED.

Pad Krapow... only I had no chicken in the house (how the fuck did that happen?) so I used some TVP. Little mushy but not inedible.

Just saute ground chicken (or your TVP) with ample oyster sauce, some sliced thai chiles, ample sliced garlic and a lot of thai basil (which was starting to get bugs on it, so I had to use it up, plus it was flowering anyway) and serve over rice (brown rice, in this case). Easy peasy.

And yes my steak I drown in Heinze 57.

This is a habit I picked up when I was a freshman in highschool and my brother was in the hospital with a closed head injury.
My parents were there with him for I don't even remember how long. I had to cook for myself.
My Dad and Grandpa had split the cost of a cow and we had a freezer full of beef. I ate steak as often as some people hot dogs.

This compulsion does piss some people off. I can't help it.

she's sleeping and i've done dishes and two loads of laundry...
