You ever see those septic tank trucks, that go around and suck the shitpiss out of portapotties? Tilapia are the shitpiss suckers of the fish farm. But the fish farm itself is kind of like a big porta potty anyway, so Tilapia are like septic tank shitpiss rigs that suck the shitpiss out of other shitpiss suckers. But don't let me rain on anyone's parade.

Even worse... Tilapia's big porta potty is usually a very unregulated fish farm that's downstream from livestock runoff in China. Also, if you're eating it because of the health benefits fish has for your heart, you're wasting your time. Tilapia not only is low in Omega 3's, the kinds of fats that it has, actually negate the good fats that are already in your body.

Salmon, sardines, rainbow trout, albacore are some good choices. Although albacore (like all tuna) is high in mercury, if that's something you're concerned about.

Made some more salsa tonight - I am so addicted to this goodness.
Had to learn that I don't like the flavor of the cilantro stems - I now strip the stems of the leaves. Takes a long time but so worth it.

I like to boil a little pasta, then add veggies, and then chill in fridge for a great lunch: Heres a recipe: 2 and a half lb of rotini boiled al dente (no more than 7 min.). .then steam half lb of snow peas, half lb of green peas, two lb of carrots, two
head of broccoli, two cans of large black olives, mix, then chill. Asparagas is an option in the summer when it is cheaper..half lb. of that.
Very nutritious and a summer fave!!!!!!!:bye:

I got black mole from the Mexican grocery, stuck it to some spare ribs like play dough and baked them in my cast iron dutch oven at 250 for 3 hours (I had them stacked so it took longer, but the texture is better.)
The ribs braise in the mole and after you take them out you add brown sugar and ketchup and either lime or vinegar to the drippings/mole reduced until saucey, and use it to glaze the ribs on the grill until carmelized and crusty.
Very tasty.

I put two slices of thick cut beef baloney on the griddle, along with both sides of a hamburger bun heavily buttered, when both were done I put them together with cheese, fresh local tomatoes and sliced Vidalia onions. That's good late night drunk food.

I was watching this show on food network where the host showed off balogna days in her town, basically one day a week it's common for these bars to offer all you can eat balogna. But you have to bring all your own pickles, bread and whatever to the bar.
Someone dripped fucking ketchup all over my jacket last night and by someone I mean the person who asked me to grill an extra hot dog for them.

I'm not really big on plain ole cold cut baloney sandwiches, I like to get it sliced really thick, then fry it. Can't eat that way all the time, but I occasionally treat myself.

Chorizo and lentil stew with red peppers and carrots. Damn good.
Take the chorizo out of the casing, brown until crispy on the edges, remove from pot. Saute down onions, celery and red peppers. Season with dried herbs and red pepper flakes. Add garlic and carrots and continue for a few minutes. Add a can of tomato paste and paprika, coat veggies in it. Add 1 lbs green lentils and 6ish cups of stock/water mix. Bring to boil and simmer for about 45 minutes, until lentils are tender and liquid has reduced to stew thickness. Add chorizo back in about 10 minutes before everything is done.
Giant pot and it's crazy cheap, too.

They're both good. They're pretty spicy/savory the way I make them so the little bit of sweetness is nice.
I like that you can buy a single sweet potato thats big enough. If I were going to fry the potatos in a pan I'd use regular ones for sure.

I like that you can buy a single sweet potato thats big enough. If I were going to fry the potatos in a pan I'd use regular ones for sure.
The last time I did this I used white potatoes because they hadn't restocked the sweet potatoes and it is officially better with sweet potatoes the way I make it, although no slouch either way.
I bought the fake chicken strips which must be a wegmans store brand, 7 grain something or other. And oddly enough they taste more like real chicken when you bite into them but they have an oatey aftertaste. And the texture is more chicken like. I'm not sure if I prefer that to morningstar chik strips.
If you only eat them with BBQ the wegmans are better, but if you like ketchup and bbq then probably morningstar. something about the bbq makes them more chicken like.

I dont really enjoy grillers or boca burgers. I like black bean based burgers.
I think it's because the chicken products we had when I was in school had a lot of filler in them so I'm probably conditioned to be fine with it.

Around week 3 this year, we decided to start coming up with pregame meals based on the opponent that week.
It started with Mississippi State - Mississippi Steak Fajitas.
LSU - Gumbo. Most expensive damn pot of food I ever made. Shrimp, Crab meat, Crawfish, andouille sausage and chicken. Didn't help that I had doubled my old recipe, and was sending people home with leftovers. Oh, and some cornbread coated baked cajun chicken.
Ole Miss - Shockingly, there's not a lot of good / unique food in Mississippi. We panicked, and locked in to the fact that they had changed their mascot fro Ol' Colonel Reb to that stupid black bear, and ended up throwing together an "Ole Miss Black Bears Black Bean Beef Stew". Actually turned out pretty good.
Western Carolina - We went to that game, so it was just the usual road / tailgate fare.
Texas A&M - Slow roasted a pork shoulder all night, and was up making pulled pork sandwiches. A guy on the A&M board suggested that this was typical A&M gameday food. It ended up being breakfast/lunch. By gametime I was grilling bacon-wrapped barbecued shrimp skewers. Not sure what those had to to with the Aggies, but they were tasty.
Florida Atlantic - The guy at the seafood counter had some nice Mahi Mahi. Grilled those and some vegetables, served over rice pilaf with a mango and ginger sauce.
Arkansas - Pig. Of course. Country style ribs, slow boiled for 90 minutes in apple juice, kicked up with some spices and bbq sauce in the pots. Finished briefly on the grill with some sweet baby ray's original, although I could have eaten them straight out of the pot. Very little meat was able to cling onto the bones after they came off the stove.
Tennessee - Game time was announced to be 11:00 am, so we just did a big ass country breakfast. Doesn't exactly fit the "What's for dinner" theme, but whatever. The main "entree" was the "breakfast casserole" with bacon, hashbrowns, johnsonville brown-sugar sausage, eggs and tons of sharp and mild cheddar.
This week is Georgia. 2:30 kickoff.
LSU played them earlier in the year, and my coonass buddy made "Bull-Dogs". He formed hamburgers into hotdog shapes, and grilled them. The fam seems to want to try these ourselves this weekend. Trying to think of a way to jazz them up a bit. This is a pretty big game this week.

I found two grass fed Porterhouse steaks in the freezer that I didn't know I had , I had gotten them from my parents house a while back ,along with some other stuff, after they bought a side of beef , these had fallen to the bottom and gotten buried. Grilled them after a nice sea salt rub, covered them in butter for the last minute, served rare. Sides were red potatoes cooked in butter and onions, and some popcorn shrimp.

My usual B-Day meal, Sticky Fingers ribs, the sampler dinner with 4 different sauces, baked beans, slaw, mac and cheese, and corn bread too sweet to qualify as corn bread. The dry rub is probably my favorite, but the sweet jalapeno is a close second. Stuffed, almost too full to enjoy my B-Day massage and happy ending, deluxe package. Almost.

Made chili all day yesterday and had some with grilled cheese sandwiches.
4 types of peppers, sausage, ground beef and tri tip. Along with 4 different chili powders and 2 different cumin powders.
Was very tasty.
and washed it down with about 15 beers :down:

So the keilbasa with potatos thing gave way to keilbasa with cauliflower and now it's keilbasa with brussel sprouts.
When I do teh cauliflower I season them with garum masala, and when I do the sprouts I roast them with the usual seasoning, but after I add paprika to the keilbasa I throw in some hot water to deglaze, and reduce it down until it's like a sauce, then toss through the sprouts.
You either need a slotted spoon or tilt the bowl so you can eat around the grease puddle, though.

Pasta. I dont eat straight up pasta a lot and it's a good thing because every time I eat it I wonder why the fuck I eat anything else. Correctly made pasta is one of the most amazing things ever. I'm sure it has something to do with eating it so much as a kid.

Aside from fresh made pasta (which I've never made, but I've been meaning to learn how for a while), is there anything special to know about correctly made pasta, besides not over or under cooking it? I do add salt and olive oil when I cook mine. Any tips?

I actually prefer dry pasta to fresh, or atleast my mom cant make fresh pasta very well. I've had really great restaurant made pasta though so I'll leave it up to them.
I dont put oil in my water and you should salt the water until it's like sea water.
Pasta extruded from a brass dye does make a difference. It's got a rougher texture than stainless steel dyes. Trader Joes dried pasta is the only one I can tell is a brass dye. But it isn't like essential, just nice. Semolina pasta has better flavor too.
Undercooking your pasta is actually the key. Dump it when it is just a little too al dente and sticks in your teeth a little when you taste it for doneness. You can actually just tell by looking at it when it's right. The pasta will turn slightly translucent while it's under cooked and then just go opaque again when it's about done. This is when I pull it.
Put your pasta pot back on the stove and put the burner on low. Add your sauce to the empty pot. Put in anything else you're adding. I always put basil and red pepper flake in now because I like a lot of red pepper in my pasta. Add the pasta back in and stir it until nicely coated. Put a lid on the pot, turn off the burner, let it sit in the warm pot for as long as it takes me to eat a salad. Like 5-10 minutes.
The pasta will finish cooking in the sauce in the pot. When you take the lid off the sauce will look a little thicker and like it's really sticking to the pasta. It should also be suitably al dente at this point. Remember you're only adding as much sauce as you want to eat.
Perfect pasta. I wouldn't do this with angel hair but anything regular to thick should be fine.

Yeah I should probably clarify pasta to me means hot pasta with tomato sauce. I dont dispute any other pasta but thats what I'm talking about with this method. When basil is in season it's great to tear up a stack of basil leaves in it, too.
I didn't know people would think salting that heavily was odd until I was over my friends house and she was boiling pasta for something and I said "you should salt your water now before it boils so it all dissolves" and she said "oh" then picked up her salt shaker and started "salting" the water like it was corn on the cob.

That's just pointless! I open the pour spout on a big container of salt, and... pour. I agree with you about letting it dissolve, but I don't add it too early. I let the water get to where it's almost boiling first. Pour in the salt, then let it get to boiling for a bit. If the water's too cold, you run the risk of salt settling on the bottom of the pot. It can be a bitch to clean, if that happens.

If you do it when it's really hot but not boiling yet, adding salt at that point can cause it to boil over. I wait till it's boiling already. It's like superheating that can occur in a microwave.

Never had it happen until I got stainless steel pots. I also just dump a handful of salt in at once. It's pretty cool until you have to scrub your stovetop.

I don't cook with beer much at all but I just know that leaving a bar at 2 is usually terrible. Of course the smell is usually linked to not feeling so great after a night of drinking.

No. They aren't impacted. I think I'm just getting a local. But I imagine I won't be able to eat much in the way of solid food for a little while. I stocked up on yogurt and ramen noodles.

Mine weren't impacted either but I still got put out granted I got all four removed. It wasn't too bad and I think the first solid food I had was Panera. A turkey club or something like that.
