That's a great menu. I'd go with the Fresh Mozzarella Napoleon for starters, then the Lobster Bisque and for an entree, the Seafood Fra Diavolo.
Now I'm starvin' for some seafood tonight!
Not that great, but not horrible.
I would not go back, disappointed.
Tried the fried calamari.. terrible!
Grilled salmon wasn't bad.
Also tasted some kinda cheesecake/tiramasu/caramel/butterscotch type dessert which was delicious.
The waiter was nice though.

I recommend ghetto sous-vide-ing your steaks prior to grilling. It is AMAZING.
I sis a skirt steak in korean style marinade (pureed onion, garlic soy sauce, sesame oil and sugar) a couple of days ago and it was one of the best I've ever grilled.

Oh and I did ghetto sous vide tandoori chicken last night, and this morning I sauteed radishes, garlic greens and onions, and served on a corn tortilla with a runny fried egg and fresh pico de gallo (I found some consistently delicious hydroponic tomatoes at the supermarket, score!). Yay, no more hangover!

Baseball park again (GO HOGS!) tonight but no catering. We've got an awesome contraption that steams hot dogs in one side and buns in the other. It makes for some good hot dog eatin! We'll bang down some leftover dip and whatever we can scrounge up. It's the last home game we'll play so our cupboard is bare.

Just pulled some balsamic marinated chicken tenderloins off the grill. I'll put em on salad of spinach and other mixed baby greens, black olives, red bell pepper, baby bellas, diced avocado and bacon bits. I haven't decided on a dressing yet though. I think I'm going with a light parmesan Asiago balsamic vinaigrette. I'm fuckin pumped about lunch.

Big ol salad. Baby spinach, mixed baby greens, black olives, red peppers, diced avocado, real bacon bits, gorganzola cheese and a balsamic dressing. I also sliced up the other half of the avocado, sprinkled a lil Greek seasoning on it and ate it as a lil side item.

i smoked it on my weber kettle - charcoal on both sides, drip pan underneath, and soaked mesquite chips on each pile of charcoal. we sprayed the chicken with olive oil and used a toasted spice rub on/in the chicken and in the beer can. it is very forgiving and easy - takes about an hour.

Drove from NYC to Peoria over the last two days.
I stopped at German Village Coffee Shop in Columbus for breakfast. Very nice eggs and has browns with onions and cheese. Very busy place, great service.
From Columbus to Peoria, I stopped in Indianapolis, at Yat's for lunch. Great cajun place. I think there are a few, but it is not a corporate chain place. Guy let me try 4 or 5 things off the menu before I settled on the Jambalaya. Huge portion, fast service, cheap. Makes me wish I lived near here when I was younger; had less money, bigger appetite, burned calories like a furnace. I took the Chili Cheese Etouffee with Crawfish to go, it is supposed to be their best dish.
Now, I will try some spots in Peoria.

The other night I got a good deal on a chain store cello package of pork chops, complete with blood diaper. I usually don't buy meat like that, but it looked pretty good. I've never been too big on pork chops because I don't like eating Chaplin-style shoe leather. I marinated them in a fresh blackberry/chipotle thing I whipped up and grilled them. Mmmmm. Spicy purple shoe leather.
The next night, I took the 6 leftover clown-shoe chops and stewed them in root beer, chopped tomatoes, onions, the rest of the can of chipotles, garlic, salt, pepper, for about 6 hours. I finished it with some barbecue sauce and a splooge of maple syrup, and served them on some very fresh slider rolls, with some coleslaw (chopped cabbage, mayo, white vinegar, rice vinegar, s+p), dill chips, and golden mustard. I'm not big on cooking with soda, but these pulled pork sliders turned out pretty fantastic. I had rescued my mundane, suburban, failure-as-a-man pork chops.
Tonight, my wife (who usually doesn't do to well in the kitchen) had left me some lasagna for dinner. It was delicious. Gooey ricotta, tomatoey goodness with ground turkey, perfect pasta, and a nice lid of oven-crisped mozzarella. I would have totally obesed myself if she had left enough.

I'm still dwelling on how badly I want some of this right now. The only consolation for me is to nitpick and point out that mesquite is hardwood. So take that.

it was delicious. i pulled the pork, chopped it a little, mixed it up with half a bottle of uncle yammy's southern style bbq sauce. my wife made great slaw and a tangy bbq sauce and we had it on whole wheat buns. ps - i smoked over hardwood charcoal and soaked mesquite chips. i'll post a pic of the spread later.

I highly recommend THIS RECIPE (http://www.mealsmatter.org/recipes-meals/recipe/51136) for bone-in split chicken breast. The chicken comes out super tender and juicy, and the flavor is delicious. I double down on the ingredients, and where is says use either/or of something, I use half of each.

I made fried green tomatoes with my pork chops tonight. I'd never had or made them before. Pretty damn good! A friend's father grew them. They were Granny Smith tomatoes, which I had never heard of. Apparently, they've only been around for ten years.

A big ol slab o salmon that I'll grill on a cedar plank. It'll cook it and provide a nice smokey flavor to it too. I'll hit it with a homemade brown sugar based rub with cumin, hot paprika, garlic, black pepper etc. Just as it's wrapping up I'll go over it with bourbon glaze. Ribs are ok, they have really great hamburgers believe it or not, and they used to have a really good chicken sandwich. Order a few El President margharitas and that $100 will magically disappear!

Tonight is a catfish fry at a friend's place. The wifey and I are taking deviled eggs and I might grab a keilbasa (sp?) at the store, grill em, slice and serve it with a nice lil cheese platter. I'm sure there will be all sorts of cokout type sides and dessert goodies.

Homegrown lettuce salad with fresh herb vinaigrette and grilled chicken breasts. I've been perfecting grilling chicken without fucking around with some tin of water in the coals or heinous carcinogenic beer cans being oxidized into the chicken by direct flame. Skinless/Boneless breasts are notorious for being shit on a grill because they are easy to dry out. This is the method that works:
Marinade:
With my handy-ass immersion blender (i call it an emulsion blender, cause thats what that shit does with a quickness), I blend up some apple cider vinegar with smoked salt, pepper, and a good heap of paprika (smoked if I have it). I set aside a ramekin of this for mopping the chicken. To the remainder, I emulsify some low-grade olive oil and fresh garlic into the vinegar mixture. Then I blend in some chopped fresh herbs briefly, and marinate the chicken breasts for a while.
Cooking:
Once the coals are good and white, I sear the breasts over the coals, then remove them off to the side and let em cook for a bit with the lid on. Once they are about half done, I put them back over the coals, and mop them with the vinegar mixture and flip em. Mop/Flip about every 30 seconds for a few more minutes. Easy with the mopping, as errant sauce can send up a cloud of ash which will stick to the chicken. Once the breasts feel just about done, I replace the mop sauce with some barbecue sauce. A good way to rig up a nice sauce from store-bought garbage is to add some Tuong Ot Toi (Vietnamese chili-garlic sauce, the kind with the whole seeds. It's kind of like sriracha, but a little more refined) and honey or molasses. Now I baste, or lacquer the chicken with the sweet spicy sauce, basting and flipping rapidly. The sugars in the sauce will get overly-Maillardy on that ass if you don't watch it, so flip em quick. And boom goes the dynomite. It's important to be confident in your ability to check doneness by feel.. Also, I think that the added sugars in the sauce seal in the moisture.

Last night I fried off some chicken pesto feta sausage (wegmans chicken sausage tastes a hell of a lot like pork sausage) then sauted diced eggplant in the drippings with some olive oil. Added a can of diced tomatos, fresh basil, the sausage cut up and some more feta then orzo pasta. It was pretty good.
To improve I'm going to switch from orzo to penne and buy some better feta or leave it out, mine was kindof assey. But will make again, and need to start cooking more eggplant.
Top gear top tip, pull your pasta just shy of al dente then toss it with the sauce in your hot pasta pot to finish cooking, it will be tastier and your sauce will stick better/soak in more.

Last night I had thawed out two pork tenderloins. I was going to pan roast 'em, then glaze with maple/orange. I thought about it and realized that something that sweet was no where near my standards, like a free steak dinner at Outback or something. So, I decided do cook them in butter and cast iron, like a Ducasse steak. I rubbed them with salt, pepper, and a little paprika. Seared every possible surface in the butter while constantly basting with butter from the pan, about 30 minutes. They developed beautiful caramelley, maillardey crusts. Finished 'em off in the oven while I made some pan gravy. Served the sliced tenderloin over brown rice pilaf, drizzled some gravy, and put some blanched french beans next to 'em. It was a dignified meal. I realized that my absolute hatred of summer had expressed itself by cooking a fall meal.

I don't know exactly why this is, but I've found out recently how much better locally raised and butchered beef is. My sister moved in with us, and she brought over the contents of her giant freezer. At her old home, she had a neighbor who's family has a local farm. He had one of the cows butchered and gave her a bunch of meat.
We've mostly had roasts, stew bones (that look like this) http://www.bergenmeats.com/images/BfImages/SoupBones.gif, and about 20 pounds of ground beef. It's all superior to anything you buy in a grocery store, but I've noticed the the ground beef is particularly good. I really want to go out and kill a cow, so I can get some steaks! All I need is a pickup, a forklift, a flashlight, and a hammer.

We used to get away with cow tipping when we were kids...why not take that next step? Tip it and cut a quarter off.
Once you start getting quality meat it's hard to go back. I have a butcher who only uses meat from in state grass-fed with no hormones or antibiotics or anything. Oh and they don't grind up the dead cows and feed them back to the cows like alot of places do. I thought feeding them corn was unnatural enough. Is there enough marrow there to go after? That stuff is soooo good.
Try cooking a few big onions on low with butter olive oil (salt later)and pepper then adding garlic carrots celery and sweet peppers once the onions are caramellized and continue on low until everything else is too. Sear the beef in butter on both sides in a heavy pan till nice and brown.
Then I put it either in a crock pot or roast pan at 200F with a bunch of small whole or halved potatoes and the veggies on top. Then top it off with beef or veggie broth and let it cook for at least a couple hours. Usually I just leave it on low all day in the crock pot cuz it's easy so I don't know the minimum but even 8 hours isn't to long. maybe tie a string around the beef if you go that long though.
I like to take the mirepoix (veggie mix) and add it to quinoa after toasting it in the pan and adding broth too.Has that umame satisfying meat thing going for it. quinoa is like rice or couscous in a wat but more satisfying. actuall is a complete protein

heres the recipe - i didn't use a lot of milk and doubled everything - also added parsnips, turnips, potaotes, and portabello mushrooms. also used a whole roasted chicken
Ingredients
* Pie Dough
* 1 1/2cups unbleached all-purpose flour
* 1/2teaspoon table salt
* 8tablespoons unsalted butter (1/4 pound), chilled and cut into 1/4-inch pieces
* 4tablespoons vegetable shortening , chilled
* Chicken Pot Pie
* 1 1/2pounds boneless, skinless chicken breasts or boneless, skinless chicken thighs
* 1can low-sodium chicken broth , with water added to equal 2 cups (or use 2 cups homemade chicken broth)
* 1 1/2tablespoons vegetable oil
* 1 large onion , chopped fine
* 3 medium carrots , peeled and cut crosswise 1/4-inch thick
* 2small ribs celery , cut crosswise 1/4-inch thick
* Salt and ground black pepper
* 4tablespoons unsalted butter
* 1/2cup unbleached all-purpose flour
* 1 1/2cups milk
* 1/2teaspoon dried thyme
* 3tablespoons dry sherry
* 3/4cup frozen peas , thawed
* 3tablespoons minced fresh parsley leaves
Instructions
1.
1. For Pie Dough: Mix flour and salt in workbowl of food processor fitted with the steel blade. Scatter butter pieces over flour mixture, tossing to coat butter with a little of the flour. Cut butter into flour with five one-second pulses. Add shortening; continue cutting in until flour is pale yellow and resembles coarse cornmeal, keeping some butter bits the size of small peas, about four more one-second pulses. Turn mixture into medium bowl.
2.
2. Sprinkle 3 tablespoons ice-cold water over the mixture. Using rubber spatula, fold water into flour mixture. Then press down on dough mixture with broad side of spatula until dough sticks together, adding up to 1 tablespoon more cold water if dough will not come together. Shape dough into ball, then flatten into 4-inch-wide disk. Wrap in plastic and refrigerate 30 minutes while preparing pie filling.
3.
3. For Pie Filling: Adjust oven rack to low-center position; heat oven to 400 degrees. Put chicken and broth in small Dutch oven or soup kettle over medium heat. Cover, bring to simmer; simmer until chicken is just done, 8 to 10 minutes. Transfer meat to large bowl, reserving broth in measuring cup.
4.
4. Increase heat to medium-high; heat oil in now-empty pan. Add onions, carrots, and celery; sauté until just tender, about 5 minutes. Season to taste with salt and pepper. While vegetables are sautéing, shred meat into bite-sized pieces. Transfer cooked vegetables to bowl with chicken; set aside.
5.
5. Heat butter over medium heat in again-empty skillet. When foaming subsides, add flour; cook about 1 minute. Whisk in chicken broth, milk, any accumulated chicken juices, and thyme. Bring to simmer, then continue to simmer until sauce fully thickens, about 1 minute. Season to taste with salt and pepper; stir in sherry.
6.
6. Pour sauce over chicken mixture; stir to combine. Stir in peas and parsley. Adjust seasonings. (Can be covered and refrigerated overnight; reheat before topping with pastry.)

I made a variation on turkey pot pie which really turned out.
Roasted two turkey thighs in a 10 inch sauce pan. Then roasted potatos in the same pan with the turkey drippings while I sauted the veggies in another pot with a heavy tbls or so of dried herbs de provance. When the potatos were done I put them to the side and made a roux in that pan with a little more oil. Diced turkey into the veggies, stock into the roux until thick, combined everything and simmered a few minutes until the sauce tightened up enough, ate over top of the crispy diced potatos instead of a pie crust or mash. The veg sauted longer than I normally would have because I was waiting for everything to come together, and it really developed the flavors.

Last night i was watching Best Thing I Ever Ate. Got inspired, went to Wegmans bought gruyere, and a few other exotic fancy cheeses, some unsliced hoity toity bread, and a panini press. I paid 103 dollars for fancy grilled cheese sandwiches. Oh and made tomato soup for dipping. It was ok. Fuckin Food Network.

I pan-fried some lamb chops last night, and steamed some broccoli and made some aioli for it. Then I kicked myself for not buying a lamb this year, like I had planned. I am fantastic at planning things, but execution seems to be my problem area.

I made beans in the oven without soaking them or doing a speed soak or any of that shit.
In a big dutch oven I fried all my aromatics in oil (carot, garlic, onion and rosemary) added a can of diced tomatoes, then added 1 lb of dried white beans, covering with two inches of water, season, bring to a boil, put the lid on, and put into a 375 degree oven for about an hour and a half or until the beans are tender. They were nearly done and I put them on the stove top again with the lid off to reduce down the liquid. If the beans were done and you didn't want them in a sauce I'm sure you could just drain them.

Someone already does, but it's not them. But I'm sure whoever does, licensees the pouch from the same German company that actually owns the pouch and the juice. There are girly daiquiri type drinks that come in pouches that are larger, kind of hour glass shaped, and with a screw cap instead of a straw.

I never drink that), and used it as a mix. It was quite tasty. Of course, this doesn't address the concept of drinking booze from the pouch. I cut the corners off the pouches, and poured the juice into my glass with the rum.

10 peel and eat shrimp with homemade cocktail sauce (made with sugar free ketchup) , and bourbon.
cocktail sauce is very high in sugar, make your own using 1/4 cup Heinz low sugar ketchup, a teaspoon of horseradish, a couple of drops of lemon juice, and hot sauce to taste. Only a couple of grams of sugar and it's better than the store bought.

Eggs Benedict are one of my favorite foods. A french bistro I used to work for made them with toasted croissants, jambon de Bayonne and béarnaise sauce. Ridiculously good.

I made Easter lunch for my sister and her family. Grapefruit wood smoked chicken, turkey bacon wrapped scallops with mango lime and chile puree, grill roasted red potatoes and asparagus, snap peas, cast iron skillet corn bread and cantaloupe with strawberries. The three year old ate a ton of candy, ran around like a maniac and spilled a full bottle of bubble solution on the carpet.

Damn it was so good - I forget how flexible a bag of cabbage can be. I just start dumping stuff from the fridge and walla!

Wegmans is fucking with their filled pastas and I dont like it. My two go-to's are goat cheese and herb tortilinni and portabello mushroom whatevers and now they dont seem to carry the goat cheese anymore and they made the old bite sized mushroom ones into jumbo portabello ravioli.
