Need refried beans and spanish rice. Otherwise looks good, I'd toss a lil beer into the marinade to add some tenderness to the chicken.

If you do not want or have the time to make it yourself Mahatma makes a great Spanish rice. I'd give Rice Roni a somewhat more distant second but still good.

I don't know how to make it, although I do want to be able to make in the future. Tonight's going to be a test run. I'm home alone and want to try making fajitas so I can make it for my wife sometime. Fajitas are really the only Tex-Mex type of food she likes.

Per one cup of rice you use 8 ounces of tomato sauce, like a teaspoon of cumin, chopped onion and tomato to taste. Instead of boiling your long grain rice you first throw it in a pan with some olive oil, move it around until the rice starts to slightly brown, then dump in your water and tomato sauce.
I am forgetting something, I need to check recipes.

tonight we will be having smoked pork butt. I started them at 9pm last night and they hit 200 degrees at 10 this morning. They are currently wrapped in double foil in the cooler. I am making a carolina vinegar sauce and we have a Texas BBQ sauce. Also making slaw and have cheap burger buns.... can't wait...

Last night was pan-fried rib eye, gnocchi frites with quick tomato confit "ketchup", and zucchini and summer squash with tarragon, lemon, and browned butter.
The gnocchi frites were tricky. I used Keller's recipe for Parisienne gnocchi, and piped half the batch out of a ziploc with the corner cut off into simmering water, which resulted in about 50 par-cooked gnocchi "frites" (they came out more like the shape of haricot verts). I chilled these in the fridge for a while, then fried them in walnut oil (I was out of canola). The first batch was of course overcooked and not that good. The second batch I took care to fry just until light orange in color, then drained on a rack. These came out pretty good, with the outside nice and crispy, and the interior still a little gooey and creamy. I'm not sure if I would make these again. I think I've been watching too much Top Chef lately.

Oh my gosh!! OMG, OMG...I had to eat at my sister's tonight. I hate dinner nights at her house. She is the terriblist (i know that isn't even a word) the most horrific cook ever. We had chili and subs. Luckily we could make our own sandwiches. The chili and soup was terrible. Yech!
I should move in with her for a couple of months. I'd probably lose 50 lbs in no time.

I don't know what the official word is on cooking turkey burgers, but I marinate the grind in worcestershire sauce, good balsamic vinegar and olive oil, at about equal amounts. I take the burgers off of the grill a little earlier than most, and the burgers come out fantastic.

You can also add an egg or two to help.
I had Kung Pao chicken over steamed rice from my 3rd favorite Chinese restaurant. Vegies were nice and crisp and they trimmed their chicken, so besides the sodium I ate pretty healthy.
Had Pad Thai last night.
Tonight chicken w/ peppers and onions over rice.

I shaved some horseradish root from my garden.....Added to Pot roast with herbs from garden then I ate dirt from my garden !::tongue:...I need to give away about 50 bags of fresh herbs..such a shame to waste it..Better call Jauble to come by!!!!!!
