hot skillet, fried egg,.. and you get that crispy fried egg. the best.
The only time I eat eggs benedict is when I'm at a brunch at a hotel restaurant, but man do I love 'em. I wish I knew how to make 'em.

I tried something the other day that I REALLY liked.
I cracked 2 eggs in a bowl and removed about 1 egg white. I whipped that egg white by hand until it was foamy, about a minute. Then I folded in the rest of the egg and cooked it as usual.
It was the lightest, fluffiest egg sandwich I ever had in my life. And the egg almost doubled in size from the whipping. Barely fit on the bread I usually put it on, which was kinda cool also.
Favorite egg sandwich is eggs (made as above) on a buttermilk biscuit with monterey jack cheese and sliced Nova Salmon (lox). Heaven.

I won't eat cold eggs or egg salad.

Oh, i tried to find a vietnamese dish, b/c i had a fav. restaurant and no matter what dish i got a egg got put on top of it and i loved it.

just had corned beef and scrambled eggs. yummy. scrambled eggs are my fave, but on occasion i'd get eggs benedict at the restaurant i used to work at. damn good shit.

Wow, of all the choices I didnt see my favorite way, basted. My 96 year old grandmother still makes em this way: fry up your bacon or sausage first to get the pan full of grease. Then crack the eggs in the pan and as they cook, take a spoon and ladle the grease unto the egg, making it crispy and yummy.

my favorite even though i haven't had it in ages is a poached eggs over toast, then slice it all up so you get a bit of egg with toast with every bite. delicious. my grandma used to make them for me all the time.
second fav. is over easy and soaking up the yolk with toast.

I thought it had more to do with the amount of times you flip the egg "over". Over easy you flip the egg once, so yolk side down before serving. Over medium meant over twice, hard three times.
But it ultimately comes down to how much chicken embryo runs out onto your plate to be soaked up by your toast.

good points all. and bacon fat makes most things tastier! i like to run some of the hot bacon fat onto the bagel or roll i'm eating the bacon on. mmmm healthy!

my mom makes the best scrambled eggs i have ever had using bacon. she dices up a bunch of bacon and cooks it up in the skillet, then drains all the excess fat. then puts the eggs in right with the bacon so the bacon gets all scrambled in with the eggs. great stuff, but im still going with my grandma's poached eggs.

I love scrambled eggs with ketchup! I live in Atlanta but my family is from Upstate NY.... No one that i have met in the south does this... I guess i picked it up from my dad... I can't eat scrambled eggs any other way.....

I've never had a scotch egg, but I dream about it. An egg covered in sausage. brilliant.
Poached eggs are my fav though. Lots of salt and pepper and rye toast.

When I scramble eggs, I use a hand mixer kind of like this one...

Mine isn't as fancy looking as this one, but it's the only pic I could find.
I scramble the eggs and a little mild with the mixer, and it makes the eggs come out extra fluffy. I also recently threw in some leftover nacho cheese. Quite tasty!

I prefer sunny side up, but it's not easy to cook it right. You usually end up with either an underdone white area or overdone yolk.
Cooking the white to completion and not overcooking the yolk is an artform that few cooks have, but when they nail it, it's a thing of beauty.
