Anything that can be heard on a windows computer can be recorded with Audacity. Go for the Beta version. If needed, you can set up timed recording.

If you mean videos that you have stored on your harddrive, you should use a demultiplexer. For example, VirtualDub will let you save the audio seperately from the video and even compress it to another format (such as mp3). You can also select only the portion of the audio that you want. It works for mpg and avi's, but the "official" virtualdub doesn't have support for wmv anymore. Try VirtualDubMod for wmv support.

the mrs recommends goldwave, they have a 30 day free trial. if not that, try soundforge, adobe audition, or an older version of adobe cool edit you can get from your torrent site of choice. she says they record off the soundcard and don't import the way others might. whatever that means.
