SCRAPPLE

Scrapple is typically made of hog offal, such as the head, particularly the heart, liver, and other scraps, which are boiled with any bones attached (often the entire head), to make a broth. Once cooked, bones and fat are discarded, the meat is reserved, and (dry) cornmeal is boiled in the broth to make a mush. The meat, finely minced, is returned, and seasonings, typically sage, thyme, savory, and others are added. The mush is cast into loaves, and allowed to cool thoroughly until gelled. The proportions and seasoning are very much a matter of the region and the cook's taste.

can't get it in jersey, but always a favorite when i visit family in PA

when i was little my mom made me peanut butter and jelly sandwitches and she would always butter the slice that got the jelly. so i guess i ate peanut butter, jelly and butter sandwitches. I had a friend from kindegarten come over after school and my mom made us the sandwitches and he was like, yuck, why did she put butter on it? and i said, yeah yuck. never had one again. :(

i should find that kid and shove one of those sammachiches down his throat.

my son did the same thing with his favorite - baloney sandwitches with ketchup. he loved them till he started school and some fucking kid made fun of it. he hasn't had one since.

You wouldn't believe the number of people down here in Texas that eat cattle balls. They call them "mountain oyters" and eat the hell out them. Never had the urge to try 'em. Also they have these rattlesnake roundups where they're frying up rattlesnake meat. And of course they say..."Kinda tastes like chicken."

Scrapple is great, I havent had it since my granparents moved from Philly.
