Ghosts and Goblins.  The fucking HARDEST game every.  My sister, father and I tried for months and never got past Stage 3.Then with the advent of the internet, I googled it, and found that it was pretty much universally accepted that the game was impossible.  I did eventually beat the ROM version, but cheated because you could save on the ROM.RC Pro Am was awesome too.  I remember playing it at my Grandparents house every weekend.
