<p>Noticing in the lasagna thread that some people were calling it sauce I decide to see who calls it sauce and who calls it gravy and why</p><p>I dont understand why&nbsp;some people call it gravy&nbsp; and some call it sauce. Its funny most NJ Italians call it Gravy and Most NY italians call it sauce.</p><p>Heres my answer. When its made with meat it called gravy. (meat meaning sausage, meatballs, peporoni, pork, neckbone, brauchal (SP?) etc)</p><p>When its not made with meat and it is just tomatoes and seasoning its a sauce and we usually call that simply tomatoe sauce.</p><p>I know some of you will say what about gravy for turkey, meat, ham etc. Well I call that brown gravy.</p><p>Lets hear what you think and tell us if you Italian or not and were your from.</p><p><strong>100% Italian from NJ and all my friends, family and everyone I know calls it Gravy!!!</strong></p>

Gravy is sauce that has been thickened after cooking. You can't apply the &quot;gravy&quot; term to lasagna, unless you are taking the sauce from the lasagna,&nbsp;then thickening it,&nbsp;and returning it to the dish.

Gravy is made from hot animal fat and starch. sauce is made with maters, or cheese.

Gravy is made from the juices or fat of cooked meat, then thickened and seasoned, and used on meat or potatoes.&nbsp; Just adding some meat to a sauce doesn't magically turn it into gravy.

I know it as this, when talking Italian it's called Gravy. When we speak english it's sauce. No matter if it's got meat or it's plain.

<p>It's Sauce. Tomato-based&nbsp;red stuff for pasta with or without meat (that just makes it Marinara Sauce or Meat Sauce).&nbsp;Gravy is the stuff that goes on meats (turkey, roast beef, etc.). Here's a thought. Across the street there was an italian restaurant named Colettas. We'd go there for lunch and they would serve red sauce/gravy on mashed&nbsp;potatoes that were to die for. I remember licking the bowl to get every drop. Grilled cheeses were made on half a loaf of fresh italian bread...</p><p>&nbsp;</p>

I read somewhere once that Italians and Spanish (from spain) were suppose to have their own box to check when it came to race for applications, loans etc. I read that some Italian and Spanish (from spain) reached out to the goverment to not have this done. They wanted to blend into America. I have to look this up again it was a long time ago that I read this.</p>
