I will eat almost ANY lasagna! I don't have the patience to make it too often. Yes, I do like it piled high, and a nice amount of sauce.

When I was a kid, my dad would sometimes skimp on the grocery money that he gave my mom. When he did, she'd use cottage cheese instead of ricotta. The grocery money would increase right after that.

My wife is Polish and her lasagna is better than my mom's who is italian.&nbsp; It's all about the ingrediants. And a bit of spinich, good cheeses and great sauce.

The turkey chopmeat is actually pretty good in the lasagana, if you ever tried it. It didnt exist when I was growing up, and everone used beef chopmeat&nbsp;or chopped sausage.&nbsp;My mom also puts sliced up hard boiled eggs in it, which I dont like really, but my wifes family kind of scramles the egg and mixes it into the ricotta and maybe thats why its firmer, not sure.&nbsp; All I know is I prefer it to not fall apart when its lifed out of the pan with a spatula.

My Lasagna has gotta have Ricotta,Lg curd cottage cheese, Mozzarella, and grated Parmesan blended with 2 raw eggs then layered pasta - cheese - sauce/meat ... repeat topped with blend of oregano,olive oil and tomato paste . usually at leasy 5 layers thick. I only boil pasta long enough to make barely limber. Ilike a little onion[diced] and a little diced mushroom in the sauce. Man I'm starvin'.

<p>Technically the dish is Lasagne, not lasagna.&nbsp; Lasagna is just a single piece of pasta.&nbsp; Anyway, my grandmother made hers with sausage, and put nutmeg in the ricotta.&nbsp; It was real loose because she mixed alot of sauce with the ricotta.&nbsp; I tend to make mine very different.</p>

Ground chicken sucks to use as a replacement. </p>

<p>I started making a delish lasagna maybe 2 years ago.&nbsp; I cook the sauce up from scratch, w/&nbsp;ground sweet sausage&nbsp;and beef, let it cook all day, and that MAKES the lasagna.&nbsp; I make extra sauce and eat it with bread throughout the week, I don't even buy store sauce anymore.&nbsp; Instead of store sauce, I just buy high quality canned whole tomatoes, heat it up, blend w/ hand blender, and add some spices</p>

Again, you can buy it year round if you dont grow it.&nbsp; &nbsp;I prefer lighter, fresh tastes in general. For a red sauce I'll finish it off with a splash of&nbsp; red jug wine at the end, and even a <strong>tablespoon </strong>or two of red wine vinegar if needed. I also do a balsamic and mushroom red sauce that I really like. Salt and vinegar are the Yin and Yang of cooking.&nbsp;Or you could save yourself alot of trouble and just buy a jar of Rao's. &nbsp;<p>&nbsp;</p>
