Acrylamide & trans fat laden fries (the skinny ones) are the best. Followed by tater tots.

Really any style has its own charms - except boiled.

My suggestion is the perfect baked potato,

Recipe:
1 potato
1 oven
15-48 minutes
1 OZ. love/common sense

Before you know it, hot potato.

When it comes to baked potatoes, I've found that I can get them more consistently perfect in my microwave than in the oven. I'm not a fan of cooking in a microwave, but in the case of potatoes, it's the best.

As for the baked potato, microwave's the easiest, but I love to grill them.
I guess they still qualify as "baked" if you cook them that way.

microwave 3 russets for 6 minutes (poke lots of holes in them first). let them cool a bit, then roughly chop them.

melt enough butter to cover the bottom of a frying pan and add the potatoes. season with salt, pepper, onion powder, garlic powder, and cayenne pepper.

let the potatoes brown, stirring frequently. add more butter to the pan and give it a good shake when the pan gets dry.

cook until the potatoes are well browned and serve on the side of a delicious steak.

take yer the sweet pertada and cut it so you have half inch thick discs. Put said discs in a ziploc bag with olive oil salt and pepper and smoosh around so the potatoe is coated. Cook using indierct heat on a gril, flipping over once after about five to ten minutesl and you got an excellent side to whatever you want.

Pellkartoffeln mit Quark

Boiled with peel then peeled when warm. Served with Quark (almost like a cream cheese, but lighter, like yogurt) and fresh chopped onion and fresh cracked pepper. possibly a little square of butter melting over the potatoes.
It's always been a light quick summer lunch.

Being German we definitely use potatoes in almost every meal. The difference is we don't really fry it or use it as french fries, hash browns or tater tots. Mostly fresh boiled with some seasoning, rye seeds, salt & pepper or parsley.
If we go heavy on it we prepare it as a gratin or smothered with cheese and stuff.

Clean and cut red bliss potatoes into small cubes. Cook them in the microwave for as long as it takes to cook them and make them soft. Heat a skillet with some oil and throw them in, adding whatever you please. I suggest green and red peppers, lots of spices, maybe some bacon, and just before they're done some shredded jack cheese or cheddar cheese.

Instant hangover food.

Twice baked potato. I bake them for an hour or so. Let them cool. Scoop out the taters and put in a bowl. I add bacon, scallions, half and half, s&p, butter and jalepeno cheese. I whipped them up a bit. Put them back in the skins and sprinkle Hungarian paprika on top. I put them back in the oven for about 1/2 hour.

I love 'taters in all sorts of ways:

Baked (with kosher salt on the skin, sour cream and chives). It's a MUST when I order a steak!

Fried (sweet potato fries knock my socks off! my all-time fave is Nathan's fries!)

Boiled (with a good corned beef and cabbage-- perfection!)

As a salad-- loves the traditional mayo kind and the vinegar-based salads.

Smashed-- especially with maybe a mix of russets and red-skinned potatoes. And added garlic!

I also love my potatoes in pierogies.

In college, my fave meal when I was living off campus was a baked potato loaded with raw zucchini, cauliflower, red and green peppers, broccoli and creamy cucumber dressing. I wish they still made that dressing.

I like mine mashed with butter and salt and pepper
I like them also sliced with onions and browned in the same pan that a chicken was roasted in.
I also like them au gratin.
If I have them baked, I prefer just butter and salt, I do not need the sour cream and chives and stuff.
There is really not too many ways I do not like them, but it does not have to be fancy, like twice baked or whatever.

The Portuguese also have a way that they make them where they are baked in a pan with kosher salt and olive oil and then they are hit until just slightly flattened.
