Veggie soup - The potato soup from either Atlanta Bread Company or Houlihans. In Sheepy's case, you can get it without bacon. In Moe's case, extra bacon.

Meat Soup - Can never go wrong with a solid chicken noodle. Au Bon Pair makes a good one with unsoggy noodles.

Chili - Frontier Chicken Chili. It's a red chili with chicken. It rocks with Sourdough bread.

While the clam chowder at Legal's and the french onion soup at the dubliner are quite good, I still prefer my mom's chicken or beef soup. I could drink the broth from that all day. And actually, even better is when she does turkey soup after Thanksgiving because it ends up full of dark meat. And I loves me some dark meat.

If you want to go Vegetarian, Sheepy, my sis makes a great butternut squash soup with ginger, coriander and other spices - mmmm mmm...

Or if you want to go cold soups, I always enjoy me some gazpacho (especially at Jaleo here in DC) or even a nice Vichysoisse. But I know a lot of people who really despise cold soups.

I also really enjoy beef barley soup, which is why I'm bummed that Campbell's Scotch Broth has become so hard to find. It was by far my favorite canned soup.

Given the sandwich thread, I was going to start an entirely new thread about the best soups. However, since Sheepy already started this one, I'm not going to restart.
There are certain soups I never pass up if I get the chance:
Spilt pea, preferably with some ham or even better chorizo
Corn Chowder
New england clam chowder at a good seafood place
Lobster bisque, at a really good seafood place
I never tried Broccoli Cheese soup until recently. It's damn good stuff.

Here's a good summery, south-of-the-bordery soup that I made up. Now my wife wants it more than I like to cook it.
Start off as though your making a basic chicken soup, sweat some onions in olive oil in your stock pot. Cube up some chicken breasts and throw 'em in there to brown. Some diced red bell peppers, carrots and celery won't hurt anything, either.
Finely dice an appropriate amount of serrano chiles and put it in. We like it nose-running spicy. Towards the end of the saute stage, throw some garlic in there. Saute just until the garlic becomes fragrant, then deglaze with a little chicken stock for a second, then drown the whole mess in more chicken stock.
You can add all kinds of vegetables, and when you add them depends on their hardiness under boil. Potatoes, zucchini, whatnot.
Simmer until the chicken and veggies are the consitency you want. In the meantime, take some quality fresh corn tortillas, and cut 'em into long strips. Briefly fry them in some veggie oil, in small batches. Drain them on some paper towels, and salt them.
Dice up some cilantro (coriander leaf), fresh tomatoes, and avocado. Cut up a good pile of lime wedges. Check the soup for seasoning, add the cilantro and tomatoes, and simmer for a few minutes longer, not allowing the cilantro to turn canned-pea green. She's ready! Now you can condimentalize with liberal dosings of lime-wedge-juice, avocado dice, and tortilla strips. Hell, save some of the diced tomato and throw that on there too. Make sure your beer is cold and enjoy.
