I'm a big pasta salad fan and I'm always making new ones... the one I'm
eating right now for lunch is really good so I wanted to share.
1 cup penne
2 slices bacon, fried on medium until no fat remains, drained well and sliced.
3 sundried tomatoes drained well and sliced.
1/2 lb asparagus roasted at 450 until soft, then given a shot under the
broiler until starting to color (about a couple of minutes) (and if you don't
know - the way to prepare asparagus is by holding the stem and holding the
end of the stalk and bending it - it will snap. Discard the thick part and keep
the nice tender part of the stalk)
6 grape tomatoes, quartered lengthwise
Generous tablespoon of goat cheese, crumbled (about 1/3 of a little log)
Generous tablespoon of shredded asiago (parmesan/romano would be fine -
but asiago has a slightly stronger flavor that holds up better to the other
strong flavors)

Yup that's why I made it - they were what I had in the fridge!
The other day I made a good one with sauteed kale, bacon, parmesan and
pine nuts.

<p>nice recipe, thanks! alot of cool/delicious ingrediants...</p><p>i learned that trick about the asparagus from a co-worker and have been eating fresh asparagus ever since. i just slice up a ton of garlic and saute the asparagus and garlic in veg oil with a little salt and let it drain real good when done(usually when it turns dark green). the kids love it and 3 big bunches doesn't last very long...</p><p>pasta salad - simple but enjoyable is bowties, tuna, sliced carrots and a little bit of mayo...</p>

I really like tuna, hardboiled egg, a little red onion and a good amount of
tarragon. I love tarragon and tuna for some reason...

<p>dont sleep on shallots, and goat cheese is really good especially when combined with sun dried tomatoes</p><p>sliced grapes are also good</p>

<p>My mother makes a really good pasta salad, nothing like any I have tried or seen in stores. I will try to get the recipe from her. I know it has baby shrimp in it. Thats all I know for now but will try to get the recipe.</p><p>I too love pasta salad and coleslaw, but Im very picky with my coleslaw not everyone knows how to make it right.</p>

<p>not pasta but a healthy quick dish. i made a nice bowl of it today</p><p>it's arabic and it's pronounced FEWL but i think it's spelled FUUL</p><p>> 3 cans of fava beans - pour beans and juice into a sauce pan and boil til beans are heated</p><p>> dice 2 large or medium tomatoes</p><p>> once beans are heated pour about a cup of heated bean juice into a bowl and add the diced tomatoes</p><p>> strain the remainder of the juice from the beans</p><p>> place strained beans in bowl with diced tomatoes</p><p>> add salt and pepper to taste</p><p>> crush 4 LARGE cloves of garlic and add to bowl(nice and raw)</p><p>> add some olive oil / add some lemon juice</p><p>> add the spice cumin 'to taste' and mix all together</p><p>talk about some good eatin' the family likes pita/middle east bread with it but i just eat it as is</p>

Yeah.... any of this cold stuff is great in the summer!
Escarole, pine nuts, and dried cranberries.... mmm...
