I went to a party this weekend for some friends moving to Wisconsin. As a gag someone brought a bunch of cheese (not all from Wisconsin) and I found myself munching on the cheese plate.

What's your favorite?

And favorite cracker. I go with Wheats worth and Stoned Wheat crackers.

<p>I've really come to enjoy a semi-sort parmesean.&nbsp; So good.&nbsp; I don't think I've eaten a type of Blue Cheese I haven't enjoyed.&nbsp; I remember once I got this stuff from the cheese cooler at some supermarket called famer's cheese or something.&nbsp; It wasn't really cured long and was a little mushy.&nbsp; Damn good.</p><p>Hows about a nice buttery swiss?&nbsp; Kicks ass.&nbsp; I always get a pound of swiss when I get lunch meat.&nbsp; I use about 1/3 of the pound on sandwiches and end up eating the other 2/3 just standing there making the sandwiches.</p>

I like all kinds of cheese but these are the three that I pick up to take to parties.

You can get these all at Chez Cheese in Tenafly (bergen county). They'll throw a plate together with some greens and grapes on it with the cheese if you're in a hurry.

Don't forget the crackers. (I have before) And please...don't buy any of those over flavored or over-salted ones just get the regular water crackers (Carr's is good) so that you and the other guests can taste the cheese and not the synthetic powder coating on some shitty cracker! (Stoned wheat thins and the sesame ones are ok too.)

Well now this is a poll that i can sink my teeth into. I am a cheese fanatic. Once every two weeks I scower the local stores and hippie shacks for new cheeses to try I normaly buy 1 or two pounds of cheese to last me through to the next pay day. I don't have a favorite cheese so to speak there are a few i don't care for though. I've dont care for the flavors of a developed swiss. Babby swiss is good . I do like strong cheese though just not swiss so much. I also don't care for the creamy cheeses like brie that full cream flavor is just too much for me. I've taken cheese to another level however, I've been making my own cheeses for about a year now. Not long enough to get it perfect but im getting there. I go through a lot of Neufchatel it is a fairly easy cheese to make close to creame cheese but using 2% milk insteat of cream. I've made several hard cheeses that are close to cheader but a little bit milder because i can't manage to let them age verry long before i bust into them :). My attempts at fetta have so far been disasterous so salty that it causes a gag reflex. but all in all cheese is god and goes well with my home brew beers and jerkies.

I had some spanish cheeses the other day too, don't remember what they were but they were delicious.

For sandwiches I love Meunster. Eating with bread, salad, etc. I love Brie and Goat cheese. Almost nothing better than warm goat cheese. I also like a Bleu Cheese melted on steak. Now I'm starvin'.
