i made a batch of meatballs today and don't make them too often so i called my wife and my dad but neither were reachable(holy shit, what does that mean) anyway this is how i made them...

> ground meat
> eggs
> bread crumb(not too much)
> salt
> garlic powder
> parsley

i was gonna crush up some fresh garlic but i put a ton of fresh garlic in the sauce so i left it out. one thing i like about meatballs is if they're a little 'loose' and not so dense or packed tight... my dad just called back and said if you want them loose you have to add extra breadcrumb, welp maybe next time...

Looks like the funkman has been watching me make meatballs. Almost exact. Substitute basil for parsley. I also almost never make meatballs without making a huge pot of sauce. I fry the meatballs, sausage, etc in the big pot 1st. then I leave a little bit of the meat grease/juice in the pot and begin the sauteeing of the onions and garlic. They absorb the juice and help create a tasty base for the rest of the sauce!

(sometimes I like to use the ground beef/veal/pork)


Now I'm Starvin'!!!!

i actually made sausage as well and browned/fried the meatballs in a little olive oil first before putting them in the sauce... the sausage i boiled and then browned a bit before putting them in the sauce...

These sound very much like mine, the only addition I use is the water-soaked italian bread or rolls to help hold them together. Not too much, I don't want to make the bread balls you get from a lesser pizzeria, but just enough to make the meat easier to mix, easier to hold form, and tasty as a mo'fo. I also used minced fresh garlic & finely chopped onions in the meatballs as well as the pot of gravy that the meatballs will finish cooking in. And I find that the pork/veal/beef combo is really key. As is the addition of pecorino/romano chese

my wife called back and said she likes to use different kinds of meat together such as ground beef and ground pork... plus she also fries garlic and onions and puts them in like you do...
