Since yesterday was such a great day, I decided to start the old grill up after I came home from work. Charcoal for this kid, only!!! I invited all the neighbors over that I like (I dont like any of them!) and proceeded to cook up a few burgers and other things. One of things I really like is grilled breaded eggplant...love that stuff!!
Since Barbecue season has officially started (Since I say so!!!) post your favorite grilling recipes here so I can go crazy this summer cooking up all that great food. Once the weather gets nice, I never use my kitchen...I'm always in the yard!!!!

my buns and my meat...
kielbasa marinated in terryaki sauce is very good...
a salmon or swordfish steak including some butter, fresh crushed pepper, and slices of lemon 'wrapped in foil' is nice... you could use a little olive oil in place of butter... and crushed fresh garlic is pretty much great on anything

I have a gas grill. Never owned charcol before. My favorite thing to do is get some steaks from Costco (They are literally 1/2 the price of anywhere else, and awesome) and sprinkle some sea salt on them (both sides). I put the grill on about an hour before with some potatoes on the top rack wrapped in aluminum foil. About 10 minutes before they are going to be done, when the grill is at least 550 degrees, I drop the steaks on and do not touch them for about 3 or 4 minutes. This will sear them and lock in the juice. I forgot to mention, on the side burner I have I will put about 2 table spoons of olive oil in a frying pan and slice up some mushrooms. Throw them in the pot. Add some salt, pepper, sea salt and hot red pepper. ABout 5 minutes into it, drain off all the excess water from the mushroom and continue to cook. Flip the steaks. Medium rare and they are done. Grab it all on a big plate and eat like a king. A little Peter Luegers steak sauce if you like it.
