try to pick the 'most lean' available... been getting them fresh from the butcher the last few years...

my wife uses the same meat but makes them Syrian style, with onion, allspice, and some other ingrediants...

i dont wanna say difinitively, cause im not sure 100%, but last time i checked, ground beer is chop meat. they are both beef put through a machine to chope them small for burgers or sloppy joe.

Ground beef.
I gots to disagree with the FUNKMAN on a particular, and that is the fat content.
I find the really really lean meat, say, 93% makes for too dry a burger.
I prefer the 87%.
And cooking over wood is the best. I save limbs from oak and cherry trees. And fuck the lighter fluid. Anyone so incompetent that they can't start a fire from scratch needs to learn to do THAT before trying to cook.
Here's a tip from an old grizzled vet, for extra flavor, put some oak tree leaves in there just when you put the meat on the grill, and when you turn the burgers. They just smolder and smoke and it adds a nice taste.
A common mistake is to squish and squash the meat too much when forming the patties. Keep-em as loose as you can.

I usually try to get as little fat as possible with the meat like 93-98% then add in some ground pork or ground sausage.
Add in some italian dressing and a little bit of Lee&Perron's and then some italian bread crumbs to get any excess moisture up. and then cook till medium well
and if you dont grill the onions and tomatoes at the last second you are missing out
