Shrimp is one of my favorite foods in the whole world. And shrimp is also the only seafood I eat, besides fish sticks.

I love shrimp of all kinds: regular shrimp, garlic shrimp, sauteed shrimp, those rings of shrimp you buy at the supermarket.

My personal favorite is shrimp in fettucine alfredo. Squisito!

I know there has got to be plenty of shrimp lovers on this board and I wanna know how you like your shrimp. And what special recipes do you use when making it?

I like lots of different styles of shrimp too, though I don't like it or other seafood mixed in with pasta.

I only enjoy the cheap seafood like fishsticks or breaded fillets.

Well, popcorn shirmp is cool. Crabcakes and breaded clam meat is good. Those stuffed Clams rule with bacon! Fish and Chips fucking destroys with Malt Vinegar!

But if you were just to drop some Flounderdish in front of me I'd hate it.

I absolutely guarantee you the best shrimp you will ever have
are at Phoenix Garden in the city. I've almost recreated them at
home:

Get shrimp. Big shrimp. Preferably not tiger shrimp but that's
about all you're going to find in the supermarket. The
ABSOLUTE minimum is 31-40 count. If they're tiger shrimp,
take the shells off. If not, leave them on. Butterfly and devein
them (make a deep slice on their back about 3/4 the length of
the shrimp, and pull out the intestine).

Soak them in well-salted water for at least an hour. Take out
and rinse in fresh water. Pat dry.

Make a mixture of some tempura flour, and a generous
generous generous amount of white pepper (not regular pepper.
white pepper) and a fair amount of salt (I usually end up using
more white pepper than tempura flour). Coat the shrimp with
the pepper and salt and flour mixture. Oh yeah adding a little
garlic powder to this is pretty good too.

Deep fry them in fairly hot oil (hotter than you'd use for fried
chicken or something like that). They only take a few seconds to
be done. They'll turn bright red and open up.

Saute garlic slivers, slivered garlic sprouts (not so necessary if
you cant find them or grow your own) and some chopped thai or
jalapeno chils and spoon over the shrimp. MMMMM.

You GOTTA go to Phoenix GArden for these shrimp.

My other favorite is to marinate shrimp in tequila/lime juice/
garlic/cilantro and then grill them.

Drain on paper towels and transfer to a plate.

I had Shrimp wrapped in bacon last night at a Mexican place. Not bad. But I prefer scallops wrapped in bacon.

I have a rule where i never order peel and eat shrimp... i prefer to not have to wipe the foods ass before i eat it, which is basically how i look at it...
plus when i go out to eat i'm not looking to do any work...

MMmmm, shrimp. I don't know if I can pick but I really love them cold with cocktail sauce.

And I think TooCute and CK should host a dinner party. I for one would willingly pitch in to buy the food if they cooked. :)

OK I will share a secret recipe you will love! Its Shrimp Campinola (pink cream sauce)

Take a saute pan<br>
melt butter and olive oil<BR>slowly cook garlic sliced very thin<br>< a small amount of slice mushrooms and black olives<br> Celantro<br>black pepper<br> Sun Dried Tomato<br> add in Shrimp broth ( you can use water)<br> as it thickens lower the heat and mix in 1/2 can of tomato paste ( contdina in nice) <br> then mix in slowley 1/2 & 1/2 do not let it curdle .<br> While you are doing this mix you are also sauting fresh shrimp (peeled leave the tail on) then when cooked 2/3 of the way mix into the sauce simmer for 5 min.

TO SERVE: Put it over Linguini or Penne( angel hair is nice but it sucks up the sauce )<br>
Hint: i like to take the amount of macaroni you are going to plate and put it in a dish put some of the sauce on it mix in then pile the sauce and shrimp over it.

CHEEZE thery say you should not use cheese on seafood but here i make an exception and sprinkle fresh parmisan or romano and a pinch of fresh chopped parcely.

Jax - use any kind of vegetable oil you might ordinarily use for deep frying - if it just says "vegetable oil" at the supermarket its probably okay. I happen to like peanut oil but that's me. Just don't use something like olive or sesame oil which would be better off as a flavoring (and that has a low smoke point), well actually sesame has a high smoke point but you don't want to use it!

*scratching head* I thought I posted this but nm I don't see it - anything labelled "vegetable oil" at the grocery store should be ok for deep frying. Just don't use something like olive or sesame oil - I think that corn oil also has a lower smoke point than other oils (around 400?) and won't get hot eonugh - peanut oil is good, but "vegetable" is fine.

make sure you skim the oil frequently because the spice mixture will come off as you fry and the floaters from earlier shrimp will stick to the new ones and leave little black specks.
