I too was gonna suggest 'Walking on Sunshine', always puts me in a good mood... but that's been done...

The late Peggy Lee's "Fever" is a great old time pop song. For jazz improvisation, check out Keith Jarrett's Vienna Concert track 1. This song tells me a powerful story of trial and triumph and is wonderfully uplifting. For somewhat more traditional classical I really love Copland's Appalachian Spring. It rules, especially considering the irony of the song's title. And when I'm feeling patriotic I listen to his Portrait of Lincoln.
