I can make pretty much anything italian. I'm also good with anything that needs to be cooked on the grill. Not big on the baking though, except corn bread to go with my home made chilli.

And there's always my mother's chicken matzoh ball soup, but that takes almost a whole day to make so I don't do it that often.

filet mignon, medium
steamed asparagus or string beans
potato leek pancakes

put a little bearnaise sauce on top. Serve with a nice Cabernet

Well, I can make a mean Grilled Cheese, but I think I'd rather make a veggie and pasta specialty of mine.
It's not hard, basically I just go to the store, start in the produce section, and buy the veggies I like most, first. Then go get my pasta and stuff.

Ingredients I use:

1 half green Bell pepper
1 half red Bell pepper
1 half yellow Bell pepper
1 half orange Bell pepper
1 yellow Squash
1 green Squash
1 quarter Red Onion
Minced Garlic
1 tsp. Crushed Red Pepper flakes
1/2 tsp. Oregano
2 cans of Crushed Tomatoes
1 lb. Tri-Color Rotini

*of course any veggies you care for can be added or substitute for one you don't like, because yes, I know there's a lot of peppers in there.

Chop all the peppers and the onion up (diced...ohh!), chop the squash into quarters. Place chopped veggies into large flat saucepan with the tomatoes. Add Minced Garlic and Crushed Red Pepper flakes. Let simmer over low flame about 10-12 minutes. Sometimes I add a half tsp. of sugar, depends on how I feel.

While the pasta is cooking in slightly salted water and olive oil, keep stirring the sauce so it doesn't burn.

Cook the pasta only 8 minutes so it is somewhat Al Dente.

Drain and rinse the pasta, put it back in the pot, pour the sauce over it, stir it up and serve.

Parmesan Cheese optional of course, to taste.

It tastes awesome, and it's really colorful.

Skidmark - the first recipe I came up with was a lot like that, except I used chicken breasts in the mix of Red, Yellow and Green Peppers. I called it "Stoplight Chicken" because it had all colors of a traffic light in it. Onions, garlic, olive oil and whatever else I could find in the cabinet went in.
