Corned Beef and Cabbage RULZ!

Ahh! I started boiling the Corned Beef brisket at about 10:30 this morning with some minced onion and the included spice packet, and I just added the carrots and Potatoes. The whole house smells great! I'll add the 2 heads of cabbage in the last hour of cooking.

I bought a few extra Corned Beef briskets last St. Patrick's day, and froze them so I can enjoy corned beef all year!

Anyone else LOVE this dish? So great, and 1 pot! So not a lot of clean-up! COOL!

You can't go wrong with meat and potatoes Irish-style. It's even better as leftovers!

I haven't had that in YEARS! Even though my family was Russian, my dad used to make the most AWESOME corn beef and cabbage. I guess boiling potatoes, cabbage, and meat was in his blood!

Corned Beef & Cabbage dinner usually yields a week's worth of leftover corned beef sandwiches! Get a good spicy mustard (maybe a little horseradish) and a good full-sour pickle and you'll be set!

I've never had it either, I'd try it though. I'll try anything once. The only kind of cabbage I've had is soul food style with hot sauce on it. Now that's yummy....smothered pork chops and mashed potatoes and greens or cabbage...mmm. :) But I must try the Irish version.

As soon as it was here, it's gone! I got a pretty big Brisket too! Have your grandma over for a little, and it's fucking gone in like 2 days! I only got a couple of helpings! And I'm the one slaving over a boiling pot!`

Next time, 7 potatoes instead of 5, and more carrots. I didn't add enough veggies.

And the WORST is when you have a big bowl full of cabbage left with no more meat! WEAK!
